Zongzi (Chinese rice dumpling 粽子) is the traditional food that we eat to celebrate Dragon Boat Festival! now it becomes a common food that you can buy in the supermarket all year round. It is one kind of dim sum. Hard to make, so I think it is the most difficult dim sum.

**INGREDIENTS SERVE 3-4 PEOPLE**
**FOR THE LEAVES**
- 50 pieces of dried bamboo leaves [50片粽叶] [Product Link: curatedkitchenware.com/products/bamboo-leaves-for-zongzi]
- 1 tsp vegetable oil [1茶匙植物油]
**FOR THE RICE**
- 600 grams of glutinous rice [600克糯米] [Amazon Link: geni.us/Zo1jfgV]
- 2 tsp of sugar [2茶匙白糖]
- 2 tsp of dark soy sauce [2茶匙老抽]
- 1 tsp of sesame oil [1茶匙芝麻油 ] [Amazon Link: geni.us/xXaSpE]
- 1 tsp of salt [1茶匙盐]
**FOR THE STIR-FRY FILLINGS**
- 6 pieces of dried mushroom [6个干香菇] [Amazon link: geni.us/XAbMOL]
- 50 grams of dried scallop [50克干贝] [Amazon Link: geni.us/Xh8MBId]
- 80 grams of dried shrimp [80克干虾米] [Amazon Link: geni.us/v3zLV]
- 100 grams of peanuts [100克花生]
- 2 tbsp of vegetable oil [2汤匙植物油]
- 1 tbsp of soy sauce [1汤匙生抽]
- 1/2 tsp of black pepper [半茶匙黑胡椒]
- 1/4 tsp of salt [1/4茶匙盐]
**FOR THE CHICKEN MARINADE**
- 250 grams of chicken thigh [250克鸡腿肉]
- 1 tbsp of soy sauce [1汤匙生抽]
- 2 tsp of cooking wine [2茶匙料酒]
- 1 tsp of dark soy sauce [1茶匙老抽]
- 1 tsp of five spice [1茶匙五香粉] [Amazon link: geni.us/G4yA9Z]
- 1/4 tsp of salt [1/4茶匙盐]
**OTHER THINGS*
- 12 salted egg yolks [12个咸蛋黄]
- Some cooking twine [一些绳子]
**HOW TO COOK**
**THE NIGHT BEFORE**
- Add a tsp of vegetable oil into the water. Boil the dried bamboo leaves for 5 minutes. Soak it in the water overnight.
- Cut the chicken into the size you like. Marinate it with 1 tbsp of soy sauce, 2 tsp of cooking wine, 1 tsp of dark soy sauce, 1 tsp of five spice, 1/4 tsp of salt. Let it sit in the fridge overnight.
- Wash the glutinous rice really well. Soak it overnight.
- Soak the dried mushroom, dried shrimp, dried scallop and the peanuts with water overnight.
**NEXT DAY**
- Drain everything.
- Cut the mushroom into small pieces. Rip the scallop shreds.
- Use 2 tbsp of vegetable oil to stir fry the mushroom, shrimp, scallop and peanuts on medium heat for 3 minutes. Season with 1/2 tsp of black pepper, 1/4 tsp of salt, 1 tbsp of soy sauce. Turn off the heat and set it aside.
- Drain the glutinous rice then mix with 2 tsp of sugar, 1 tsp of salt, 2 tsp of dark soy sauce, 1 tsp of sesame oil.
- Take the bamboo leaves out of the water.
MAKE THE ZONGZI
- Tie one side of the ropes somewhere. The rope needs to be long enough to tie 5-6 circles. I think 1.2 m is perfect.
- Stack 2 bamboo leaves together. The rough side faces down. The smooth side needs to face up
- Fold it from 3/8. Make it into an ice cream cone shape. Make sure there is no hole on the bottom, so the rice won’t drop.
- Put 1 tbsp of glutinous rice in it. Press it down, tightly pack it in.
- Add in some fried fillings we prepared, some chicken. And 1 salted egg yolk.
- Add enough glutinous rice to cover it. Press it again to make sure it is flat and tight.
- Right-hand holds it. Use your thumb and forefinger to press two sides in. Left-hand folds the upper leave down.
- The last part is that you have to wrap it up along the surface and follow the shape of the zongzi.
- Use the twine to tie a few circles from the center.
- The amount I gave is enough to make 12 - 15 zongzi. So we need to finish the rest.
- The water should completely cover the zongzi. Boil the zongzi for 2-3 hours, depending on the size. During this time, add more water if you need it.

When I was young and lived in Thailand, my aunt and my mom did this sticky rice dumpling. I enjoyed and liked part of the salted yok egg. I am currently living in America but my aunt and mom passed away. I would never had a chance to eat their cooking anymore. This sticky rice dumping reminds me about them.

I'd like to think that long before we had takeaway packaging, our ancestors were resourceful and thought about how to portion food so that everything was proportionally distributed, easy to transport and give away. These zhongzhi are perfect for eating as is, we used to take them to school for our mid-morning (little lunch) snack, though we got admonished by our teachers if we didn't throw the discarded bamboo leaves directly into the bin. If left on the canteen table, they would blow away and make a right royal mess of the place. Happy childhood recollection... this is what food memories are made of!

I was so happy to have come across your channel! And was triple happy to find you have this zongxi. I first came to taste this food when my mother was gifted by their Chinese gentleman client and if course she shared it with us. Our famuky lived it and had been going to our lical chinatown just to find it. It wasnt easy to find, especially it called differently, 'matchang'. I knew it was hard to maje, knowing how chinese food is more on preparation, but i waa surprised to see it alsi cooks a long time! Well, its certainly worth all the work. I love it, a may one day try to make this on my iwn. Thank you for sharing!

Also, it's the first recipe I've ever seen to have "rope" listed in the ingredients :) ( I know rope is not actually an ingredient, but it made me smile ) I've been trying your simpler recipes - Chao Mian, Fried Rice - and they're great. Also made Eggs & Tomatoes Noodle Soup - yum ! Xiao Long Bao next - when I pluck up the courage :)

O I'll give it a thumbs up because it do deserve it, but this is all very Chinese to me. As much as I love Chinese food I couldn't cook that in a hundred years. I'm a black man! After cooking. It will last 2 months in the freezer. Whenever you want to eat them again, take it out, boil or steam them until tender.

This looks delicious! I've bought variations of these pre-cooked, so that I could just pop them in the steamer or microwave to warm them up. My question is, once these are cooked, how long can they be stored? Also, do they need refrigeration? I've seen them displayed outside of the fridge, but I wasn't sure if that was just temporary.

Once it is cooked, It will last 1-2 day in room temp. Will last about 30 days in the freezer.

Love your channel. 😘 I must say you shouldn't discard the water from the soaked mushrooms, dried shrimps and scallops because it is actually very sweet and flavourful from the goodness of those soaked ingredients. Use them in soups or any stir-fry. Also you can add a little coriander seed powder or five-spice powder to the seasoning of the glutinous rice for enhanced aroma. Semi-fry the rice first with some browned shallots oil.

I was always curious about how these were made, so thanks for the instructions. To be honest, I don't think I"ll ever make them ... there are several ingredients that aren't found in my area [like dried bamboo leaves; salted eggs] , so I was wondering~ do you think this could be made in a dish? Like a casserole?

LOL, I have never done that before do I am not sure if you can make it in a dish. Will look into it, maybe that is a good idea. About bamboo leaves and salted egg. You can switch bamboo leaves with lotus leaves or banana leaves. salted egg is easy to make your own. Will have a short video about how to make that. Besides that, the filling is really flexible, you can put anything you like.

Yes, fresh ones will be fine. The only problem is you have to find a way to wrap it tightly, like really tight! Because banana leaves are so different than bamboo leaves. Also, the banana leaves aroma is different than bamboo leaves.

Hi, I really enjoy your channel and have been subscribed for about a year now. With the ZONGZI recipe, is it possible to substitute the bamboo leaves for banana leaves? I live in Los Angeles, California and have banana trees and would like to know if I may use their leaves to make this rather than bamboo leaves. Would this substitution work?

Yes, you can use banana leaves but it won't have the bamboo leaf aroma. The thing you need to be careful is the bamboo leaf is easier to break when wrapping and this recipe need to be boiled for hours so you need to make sure it is 100% secured that the filling is not going to come out while boiling.

No, have to boil it. It will be so hard to cook through if you steam it.

That rope probably has petroleum oil in it. Be careful and make sure its food grade rope everyone. You can smell the oil in most that has it.

Cooking twine or unbleached cotton string is a good substitute. The sort that the butcher uses is ideal.

The leave I used is bamboo leaves. Yes, you can use banana leaves as long as you can pack it tight. (Banana leaves are easy to break, so be careful with that.)

Freeze them after boiling. Whenever you want to eat them again, defrost them. You can steam them or even reheat them in a microwave.
