Make This Apple Pie Filling for your Pies & Tarts

Ingredients
10 apples, peered, cored, and sliced
4 oz (114 g) unsalted butter
3/4 cup granulated sugar
1 cup packed light brown sugar
4 and 1/2 tablespoons (50g) cornstarch
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup heavy whipping cream
Instructions
Melt the butter in a large skillet over medium heat. Add all of the remaining filling ingredients except for the cream. Cook the filling until it thickens. The apples should be fork tender. Remove from the heat and add the heavy cream. Mix and set aside to cool completely. The filling can be stored in the refrigerator in an airtight container for up to 2 weeks.
Notes
If the apples release too much liquid, the filling may take longer to thicken. To prevent the apples from getting mushy, combine a tablespoon of cornstarch with 2 tablespoons of warm water together in a bowl. Whisk tigether and add to the filling. This will help thicken the juices faster. If the filling gets too thick (too much cornstarch), thin it out with some more heavy cream and a splash of water or apple juice.

I'm 83 and my cook for 60 years is sick so I'm the new cook. I just made this but didn't have the brown sugar so I used real maple syrup instead and I added a 1/2 tsp vanilla. Then I forgot to use the cream. It tasted wonderful. My ex-cook asked where did you buy this and I said," I made it". She said,"No you didn't". So I had to show her the notes I made while you were demonstrating.

Dear Dmitra, you are right, this is the best tasting apple filling I ever made. Everybody who gets some tells me it is the best they ever tasted. I do have some information for you in return. There is an apple corer/slicer/peeler that has been around since colonial times, and is a whiz. In seconds, apple is cored, peeled and sliced as you turn the crank. Very simple mechanism, no electronics. KZbinr Oliver Porter gives an invaluable tutorial on how to use one, get the slice size you want, adjust how deep the blade goes into apple, etc. We had a couple at our bakery and they saved our lives. Young kids could turn the crank and peel hundreds of apples for us. As to model and price, that will depend on what you need. Some attach with a clamp, good if it fits your counter, or with a suction clamp that does lose its ability to hold over time. There are ones cast iron coated with porcelain, stainless steel, etc. I tend to avoid the really cheap models from China, that come in $20 range. Pampered Chef is ridiculous for $64, they provide a little wooden table to clamp the unit onto, totally extraneous if you have a table or counter top. I would check to see that the slice thickness is adjustable, peeler, too. Bed Bath and Beyond has one for $39.99, but the slice is 1/8", and I couldn't determine if the blade is adjustable. Kohl's has a stainless steel model, $34.99, with a 3/8" slice, couldn't determine adjustability. You might want to squint and see what model Mr. Oliver is using. I recommend whole-heartedly that you purchase one of these to save you endless hours of preparation. If you ever get back into professional baking, buy several. Above all, watch Mr. Oliver's video. He showed me how to do things that I didn't know in the past, but would have benefited from. Thanks again for your champion recipe. I hope you'll let your followers know if you do get one of these, and how you like it. Cheers! PS, I made a Dutch crumble topping with butter, flour, brown sugar, white sugar, oats, pecans and walnuts. Grand!

I got a Spiralizer from Amazon for peeling/slicing and I think it worked great!! I'm not an experienced pie maker by any means, in fact, this is my first from scratch apple pie filling. But, the Spiralizer made the peeling/slicing go very quickly. 10 apples in about 15/20 minutes, and it went quicker as I got the hang of the device. The slices might be border-line too thin, but I'm really happy with the results and Dimitra's recipe is amazing!! Full disclosure...I'll use a Pillsbury crust just because I know my limitations. I think it's gonna be a tasty pie!! Thanks!! ~Frank

This is a lovely recipe I will definitely be using this one to make your apple tart. I have one of those handheld gadgets that just coars the Apple. It slices them well enough and then from there I slice them thinner.

I've seen this recipe written by melting butter in pan, add cornstarch or AP flour, add spices, sugars and cream and heat until thickened stirring constantly for 1 minute. Set aside to cool. Then add to apples and stir in. Put in pie shell, if 2 crusts give egg wash and bake 425 for 15 min, turn down heat to 350 for another 45 min.

I've come across several recipes that call for 1/2 cup of melted vanilla ice cream instead of the heavy cream and I really like it better. Especially when I don't have any heavy cream on hand.

Mix all your dry ingredients 1st. I would leave out the corn starch…. Put in a coffee mug add a small dash water. Stir cook apples first w everything else, add cream warm through and then add the liq corn starch! Stir till thickened. Remove from heat

So I'm a pretty good cook, my signiture is a burger grilled with a mac & cheese center or baked beans I call them Meteor Burgers. It's December 1st and I got some apples from my job a couple days ago and just decided I was gonna bake an apple pie from scratch. I chose your recipe for filling cause it was the first in my search... mind you I've never baked anything from scratch in my life. Figured it was like cookin just math & science gonna see how it adds up, literally my dough is cooling right now. Just wanted to thank you for the content. My aunt bought me a device that peels, cores & slices the apples. I LOVE it! But beware, it doesn't work so well with soft apples. When they're soft, the corer can't get a good enough grip to rotate the apples. But we don't usually use the soft or mushy apples in a pie anyway. She bought this one for around $20. at Bed Bath & Beyond but I'm sure you can find them at most big stores & online.

TY sweet Dimitroula mou! Since I have gotten apples from the pantry, I'll utilize them. With gadgets, I have to question whether I'll use it or not before buying it.. I don't like to bu gadgets just for one thing because it's space consuming in my home. I agree with you about this.

I surely hesitate at first because the corn starch wasn’t diluted first and I haven’t made it that way ever but it is AMAZING … I used Granny Smith apples and a little less sugar for my taste it was Exactly spot on in every way! Love it! Thank you so much for sharing this.

1 stick of butter is equal to 1/2 cup. If you don’t use cups to message just google to convert to your preferred measurement.

I understand the appeal of baking an apple pie with raw apples and sugar baked directly inside of the crust, but I always make a filling on the stove with corn starch in order to avoid there being a huge space between the filling and the top crust once everything's cooked.

I own 2 Apple Peeler Corer Slicers.....one from Pampered Chef and one from Bed Bath an Beyond which is made specifically for them. The one from B B and Beyond has a suction cup on the bottom to keep it from moving. They are much quicker when handling a lot of apples. I am going to try your make ahead apple filling. Big help for the holidays!!!!!!

How much apple by weight should I start with? 10 apples varies a lot depending on the variety. Also, how much filling will this net? I.e, enough for a deep 9" pie?

This keeps fresh in the fridge for a very long time. I've had some leftover for weeks and it still tasted delicious :) I've never tried freezing but canning would be perfect!

Can this be frozen in batches? I have a bunch of apples right now; trying to figure out what to do with them all so they don't go bad. Thanks for the recipe!

Dimitra can I store my filling in a freezer bag and put in the freezer? are would it be better to but it in a canning jar and just refrigerate?

In the instructions you say to use 1/2 cup cream, but in the video you use 1 cup. Which one?

Hi D, Mine came out pretty watery. I added more cornstarch, but it didn’t help. I used Courtland apples. Could this be the reason? Yours looks so much better!

The cornstarch will thicken the sauce no matter how much water they release. Add more and it will fix the problem :)
