Күн бұрын

Jenny's deep dish apple pie uses 3 pounds of apples and an easy oil crust.
Crust:
2 1/2 cups all purpose flour
2 Tablespoons sugar
1/2 teaspoon salt
1/2 cup milk (low fat or whole milk)
1/2 cup vegetable oil (I use avocado oil)
Filling:
3/4 cup sugar
3 Tablespoons Minute tapioca (or all-purpose flour)
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
3 pounds apples, cut into 3/4-inch thick slices (9-10 cups) - I use Granny Smith
(a Tablespoon of milk + a Tablespoon of sugar for topping)
CRUST:
1. Preheat oven to 400° F.
2. Combine flour, sugar, and salt in a bowl.
3. Stir in milk & oil all at once and combine using a fork. Shape into a ball by hand.
4. Divide dough in two. Shape each into a 5-inch disc. Wrap one in wax paper.
5. Roll the other half between floured wax paper into a 12-inch circle and place into the ungreased pie pan. Patch where needed, trim edges, and add leftover dough to the other half.
6. Refrigerate both while you prepare filling. (Do not put the other half of the dough inside the pie pan)
FILLING:
1. Combine sugar, tapioca, and spices in a large bowl.
2. Peel, quarter & core apples. Cut into 3/4-inch slices.
3. Stir apples into the tapioca mixture and place in prepared pie pan.
4. Roll top pastry between floured wax paper and place on top. Trim or flute edges.
5. Brush top with milk & sprinkle with sugar, avoiding the rim of the pastry.
6. Poke about 12 slits in the top using a sharp knife. Cut out a 1/2-inch circle in the center to release steam. Place on baking sheet in case of spills.
7. Cover the rim with a pie ring or foil. Bake for 50-55 minutes until crust is golden. Cool completely.

For those who don't know she use to be a famous talk show host in the 90's alongside oprah and Sally jessy rafael Geraldo Rivera etc. I use to be hooked watching her show. I'm glad she's moved on to better things such as a cooking show. She makes everything so much simpler. Keep it coming Jenny great job and more power to you!

Jenny, I've made your crust and pie recipe over a couple of dozen times. Folks, this is a good one. The only modification I make is adding a 1/4 teaspoon of nutmeg, and sometimes sweat the apples in a pot before adding the sugar/cinnamon, then tapioca flour (last step.) I also add a 1/4 teaspoon of baking powder to the crust recipe for a lighter crust.

Anything Jenny makes is GOLD. You dont need to look anywhere else it has been tested & simplified and healthy is always mandatory even in desserts she finds ways to reduce sugar or fats and make better choices. Her meatloaf sold me ( the BEST🏆) and everything else I've made is beyond excellent... I'd say AMAZING & exceptional. Miss her want her back she has so much to offer beyond recipes. Her humor, wisdom and likeability are a gift. Jenny you are loved.

I was 16 years old when I first saw people put ice cream on pie. I had your response. In french Canadian families, a slice of SHARP hard cheese goes with apple pie. This is how I was raised. Another typical breakfast was baked beans, on a plate, never a bowl, sprinkled with sugar, I was in Jr High when I saw classmates adding ketchup to baked beans...eeyyww. So, different stokes man...

Apple Pie and a cup of hot coffee...mmmm. I learned from an old cowboy cook decades ago to use tapioca or corn starch in it so it is nice and think with no runny juice. You can pick it up and eat it with your hand and it wont fall apart or run juice all over. Thanks for the video.

Thank you Jenny, your recipes are great. I don't have a pie dish so I used the apple pie bar recipe on you blog (but used only 3 apples). Baked it in a rectangular baking dish, stuck the crust in the bottom and the top together. It turned out to be a rectangular pie, and I cut it into squares to serve. The flavor of the crust is light and lovely, can't stop eating it! Easy to make as a vegan pie if you swap out milk for soy/almond milk. Awesome!

I had already had frozen pie crust in my freezer when a neighbor came by and gave me a box of these green apples, so I decided to look up a recipe and found yours. I haven't had a chance to make your pie crust but I am truly looking forward to making it now and I do not feel intimidated. Your pie with the frozen pie crust I had still came out fabulous! Just made this pie. It's my first apple pie. The smells are filling my appartment with nothing but amazing aromas that I'm not sure if I'll be able to wait for it to cool down...thank you!

Hi Jenny; Made your Apple Pie last night, Made a few adjustments, only pealed one apple then left the peal on all the rest, added Nutmeg, Allspice, and Clove. The hardest part was waiting for the pie to cool!!! This Apple Pie was so GOOD even with the peals!!! This was my first Pie made from scratch!!! Had pie for dinner and pie for breakfast!!! Thank you Jenny for all your recipes, Aloha

Jenny, next to Chef John of Food Wishes you are my new favorite cook. I just made this pie today and it was delicious. this recipe has the perfect blend and amount of spice so it doesn't over take the flavor of the apples. My only regret is that I only made one pie.

Hi Jenny! I’m a “Johnny come lately” on this recipe, but I have to send my thanks! I wasn’t expecting much since every pie crust I’ve ever made was a cross between leather and cement. I watched your video and followed the directions. Lo and behold - not only did I get a remarkable result, but this was the best apple pie I’ve ever tasted! Thank you for sharing your cooking expertise. I can’t wait to try more of your recipes. The cabbage rolls and the baked donuts are both intriguing. 😍

This brings back such good memories for me. When I was a little girl I always watched my Mom make apple pie. When she peeled the apples she used a pairing knife. I used to eat the apple peels. She also used a fork for "fluting" the crust just like you do.
