Interesting related note - if you look at maps of the United States displaying urban violent crime vs. automotive road traffic with an eye to the range of time when tetraethyl lead was used as a fuel additive, you will see an extremely strong correlation. More damning, if you look at those same areas post the ban of tetraethyl lead, you will see a gradually declining level of violent crime. Extremely suggestive, if not absolutely conclusive. Correlation is not causation, after all. Still gives one fuel (heh) for thought.

As a historical reenactor, I've dined at a feast that served a meat pie like this. I helped the Feast Mistress make that pie. She used a combination of chicken and beef, as she herself was highly allergic to pork, and used currants and chopped dates. I remember spices used were cinnamon, cloves, and nutmeg. And like you, I found it really good. This was more of a "tasting" style feast, as she had prepared 21 courses from 7 different cultures and time periods spanning from 400AD to 1650AD...and every course had historical documentation to back it up. Your book would have certainly come in handy! I still have the gold plated spoon she gave me in appreciation of running her kitchen for her while she got about 5 hours of sleep. I got kicked out of the kitchen to sleep myself at 5am, but was back about 6 hours later. That was a great weekend.

A fine castle for a feast Max! The spices, warmed brie, dates and currants sounded particularly pleasant. I was thinking if any dough scraps remained you could shape them into knights on horseback and bake them too, afterwards placing them as decorations around the lower exterior walls in a battle scene!

I love these medieval European recipes and so thoroughly enjoy your humor. I was smiling and enjoying the story, when after telling us what Innocent II said, you went on to call him a "pontifical wet blanket". I laughed through the next section. The pie looks very impressive. Who knows: despite the fact that I don't care for mince meat, I might try this at some point. I'm going to share this with a historian of medieval England and see what he thinks! Oh, and congrats on the New York Times best selling cookbook!

I just want to say- Thank you, Max. "Tasting History" has always been the highlight of the week for the last couple of years, and has made each frustrating shift at my former job all the more bearable. I've been out of work the last couple of months after being unjustly sacked from an unnamed corn cob pipe factory (a Google search will fill you in), but I've been in a deep, dark pit of depression after 4 years of hard work went straight down the pipe. Your videos have been informative, entertaining, and one of the few things that still make me excited about waking up most days. Thank you for showing me some amazing foods throughout history and making me excited to learn that history as I did in high school. Thank you, again, and serve it forth.

There probably were dining tools that may be considered precursors to forks, used specifically to stab chunks of food so as to allow for getting it from plate or pastry shell into the mouth. It wasn't uncommon to use utility daggers or knives, but I imagine such things were kept understandably rare at feasts held by monarchs and upper-ranking nobles such as dukes. I'm sure there were also forks used that were made from bone or wood, and which likely didn't survive the ravages of time as they were used up and thrown into fires once they broke or worn out. Anyway, the late middle ages saw the introduction of iron forks, dining knives, and spoons. Rather fancy for a noble with money.

Max definitely deserves a lavish feast with the all-time classics from TastingHistory to celebrate his cookbook turning into a best seller. A table of hors d'oeuvres filled with Roman Mussles, Capon in Trenchers of Hartack (clack, clack), Pomodori Farciti all'Erbette, Egyptian humus, Medieval Lasagna. Vats of soups featuring Melas Zomos, Babilonian Tuh'u, Dillegrout, Pozole, Adafina, Workhouse Gruel, Armored Turnips, Old Style French Onion Soup. The salads featuring Caesar's, Roman Artichokes, May Day Salad with Freshly picked Flowers, Parmentier Potatoes, Pliny the Elder's Cabbage, and Ninja Hyorogan for those on an extreme diet (or a spying mission). Then moving on to the pies, with Scappi's Herb Pie For a Pope, Placenta, Victorian Mincemeat Pies, Samosas, Bierocks, Outlaw Pies. And then the meats: Saint Columba's Salmon, Nero's Pork with his Secret Sauce, Transylvanian Garlic Roast, Irish Stew, Fish with (faux) Silphium Sauce, Coronation Chicken, all arranged around a proud Cockentrice. Of course, we cannot forget our desserts: Punch Romain from the Titanic to cleanse the palate, scores of Semlor to kill seven Kings, Japanese Sugary Egg Noodles, Byzantine Honey Fritters, Pumpion Pie, Farts of Portingale, Pails of Parmesan Ice Cream and Carrot Cakes, all around a delightful Medieval Brie Tart. And liters of Viking Mead, Tudor Butter Beer, Wassail, Hipocrás and Absinth. This channel is a feast of of culinary history, and a banquet of colorful victual. Congratulations, Max, and may you get a volume 2 somewhere along the way.

Would you consider doing an episode investigating and discussing how language has changed in cook books? The old ones were very vague on specifics and relied on assumed knowledge, more telling a story to remind a familiar cook, but modern ones explain it like you've never seen a spoon in your life. I'd love to know your thoughts and research on changing tastes and writing styles!

Congratulations on the book sales, Max. Your dedication to research and passion for what you're doing on this channel shows. Pewter foil, eh? Can anyone say "lead poisoning"? Modern pewter is made without lead, but you'd want to check what liquids and foods are being served in it. From my reading, pastry coffins were to help preserve and keep pest species away from cooked meat in the days before refrigeration and Tupperware®. Pies would be made in bulk and consumed over the following days or taken on picnics- or when travelling. It was the poor who couldn't afford to discard the pastry and it became a part of the meal and they added taste to the crust to make it more palatable. Love from Australia, Garry.
