“Oh, this tastes like eating at a restaurant… .. It is very delicious!!”
Of course~~ This is the taste of Sweet Chili Chicken sold in South Korea. The original recipe for the sauce was based on Baek Jong-won's recipe ( • Korean Fried Chicken !... ), and I've been using it for the past few years. I've made a lot with it, and it's a recipe that has been sufficiently verified through the mouths of many people, so you can trust it. For accurate taste, measure the amount of sauce accurately.
The menu called Korean Sweet Chili, which appeared in the entertainment program ‘Jinny’s Kitchen’ which is currently airing on Amazon Prime, is very similar to the mini seasoned chicken I made. If there's a slight difference, it's the difference in the concentration of the sauce and the batter, but the recipe I'm telling you is a little more delicious, so make sure to make it!

[ Ingredient ]
[ Chicken Dough ]
Chicken tenderloin or breast 350g
1/2 cup of milk (100ml)
Frying powder (for the first batter) 1/2 cup (70g)
Frying powder (for the second batter) 1/2 cup (70g)
Salt 3g (1/2 tsp)
Pepper 1g (1/4 tsp)
Curry powder 1g (1/4 tsp)
[ Seasoned Chicken Sauce ]
Corn syrup or Honey 110g (1/2 cup )
Ketchup 35g (3Tbsp)
Korean red pepper paste 20g (1Tbsp)
Soy sauce 17g (1.5Tbsp)
Minced garlic 30g (2Tbsp)
Red pepper powder 7g (1tsp)
Sugar 25g (2Tbsp)
Nuts 20g
Appropriate amount of parsley and sesame seeds
Frying oil 1L
[ What is Frying powder? ]
Frying powder is a mixture of flours that usually makes fried foods crispier. I used Korean products, but Thai and Chinese products are similar. Also called Tempura flour.
Maybe you can find them at your local Asian grocery store or Amazon.
[ how to make ]
1. Prepare the chicken breast by washing and draining the water.
2. Cut the chicken into bite-sized pieces and season with salt, pepper, and curry powder.
3. Add milk to submerge the chicken and marinate for a while.
4. Put seasoned chicken sauce ingredients in a pot and boil over low heat while stirring.
5. Add frying powder to chicken marinated in milk and mix.
6. Put the frying powder in a plastic bag, add the kneaded chicken and mix evenly.
7. Put cooking oil in a large wok and preheat it to 170 degrees.
8. Fry the chicken in the preheated oil and drain the oil.
9. In a large bowl, add the fried chicken, seasoning sauce, and nuts and mix well.
10. Finish by sprinkling with sesame seeds and parsley powder.
[How to make seasoned chicken sauce]
1. Put corn syrup, ketchup, red pepper paste, soy sauce, minced garlic, red pepper powder, and sugar in a small pan and boil over low heat.
2. Stir for 3 to 5 minutes and when the sauce boils, turn off the heat and use.

The milk's job is to help seasonings like salt baste the meat evenly, and to make the meat slightly more tender. Milk is not a big part of the flavor, so it's a good idea to add it, but if you don't have milk, water will work just as well. You can use any type of milk, I used regular milk with 3.5% fat, thanks!!

Soy milk is a perfect substitute. Tofu is great too, but vegan meat alternatives can be delicious as well. Enjoy your meal! 😍

Hi! The frying powder is a mixture of flours that usually makes fried foods crispier. Also called Tempura flour or frying Mix. It's slightly different from all-purpose flour, but a similar effect can be achieved by adding starch powder. Mix soft flour and potato starch in a 3:1 ratio. And just add a little salt. Hai, tepung penggorengan adalah campuran tepung yang biasanya membuat makanan yang digoreng menjadi lebih renyah. Disebut juga tepung tempura atau campuran penggorengan. Hi, You can use any kind of sticky liquid that tastes sweet like honey will work. For example, honey, agave syrup, golden syrup, maple syrup, etc. If you do not have Red pepper paste, hmmm I'll give you a new recipe for you, I think it will probably come out similar. Corn syrup or Honey 115g Ketchup 35g (3Tbsp) Soy sauce 17g (1.5Tbsp) Minced garlic 30g (2Tbsp) Red pepper powder 20g Sugar 30g Try it this way, taste it, and add more spice or sweetness to your taste. Hi, My daughter is a Korean with a German palate who grew up in Germany and she says it's not spicy, but it depends on the person. It's spicy, but it's also sweet and sour from the sugar and ketchup, so it's not too spicy for some people. If you're afraid of the spiciness, try making the sauce without the chili powder, and add a little bit and see how it tastes. Good luck. :)

If you don't have gochujang (Korean red pepper paste), use 1T chili powder instead. If it's not sweet enough, you can add more sugar. 😀

Hi! The soy sauce used in the video is Korean soy sauce. However, you can use any commercially available brand of soy sauce. You can also use Kikkoman from Japan and it will taste the same. :)

Hi! The frying powder is a mixture of flours that usually makes fried foods crispier. Also called Tempura flour or frying Mix. It's slightly different from all-purpose flour, but a similar effect can be achieved by adding starch powder. Mix soft flour and potato starch in a 3:1 ratio. And just add a little salt. About 2% of the total amount of salt is sufficient. It's hard for me to say what the exact scientific basis is. I'll tell you my experience: if you're frying a normal chicken in an oil temperature of 170 degrees, and you put cold meat into the oil, the temperature of the oil instantly drops to 130 degrees or less, and it doesn't go back up easily. You can keep frying it, of course, but if you take the meat out after about four minutes of frying, the air in the oil comes out and the temperature goes back up to 170 degrees. This process usually takes about 30 seconds. After that, you can put the meat back in to fry once, and it will be much crispier. In Korea, fried chicken is usually fried two to three times. ha ha ha. I forgot that there are so many curry powders out there. sorry. But don't worry too much. Curry powder is used in very small amounts and does not significantly affect the overall taste. That's why I think you can add the spices you use best and like. Thanks!!!

사실 튀김 요리에서 가장 힘든것이 튀기고 난 후의 기름 처리가 아닐까 해요. ㅠㅠ 저 같은 경우엔 한 두번 정도 튀김 요리를 더 한 후에 식히고 채로 찌거기를 걸러서 식용유로 사용하고 있어요. 그리고 제가 이번에 여러번 치킨을 튀기면서 경험해 보니 한번에 튀기는 치킨의 양을 좀 적게 잡으면 튀기는 시간도 빨라 지고 좀 더 적은 양의 기름으로도 튀길수 있더라구요... 그리고 폐유는 주위에 알아 보시면 처리하는 시설이 있을거예요. 저도 예전에는 남은 기름 버리는 문제로 튀김 요리를 안해 먹었는데요, 이젠 어디에 버리는지 알아서 그래도 가끔은 해 먹는 답니다. ^^ 좋은 하루 되세요!!

Milk is not a big part, so you can replace it with water. As for the meat, pork tenderloin or neck cuts seem appropriate. If you use pork, add more chili powder to make it a bit spicier. Then it will be more delicious. If you succeed, please let me know your review! ^_^

That's a no no! Starch syrup is like honey, and vegetable oil is not a substitute. If you have a sweet, sticky liquid that resembles honey, use that. 🤔

Hey, I'm really sorry about that. Actually, Koreans love garlic, so almost every dish includes it. If you cut the amount of garlic in the recipe by half, it shouldn't make a big difference in the flavor. Next time you cook, try using less garlic and make sure to cook the sauce thoroughly in the pan; that should mellow out the strong taste. Thanks for subscribing! I tried it and it's delicious but definately too sweet; you could definately use 30g less of honey or just remove the sugar if you try this yourself.
