Must be northerners, as prodigious use of butter. Never seen a milk pasta, another northern sign. Love their pride in traditional, beautiful garb. Will try this pasta recipe. Cute clog shape. Wow. These are made in Serio valley north east of my hometown Bergamo. They're little known, because Italy has such a huge tradition of local rich filled dumplings. Even in my hometown, main course dumplings would be Casonsei, filled with pork meat. Scarpinocc, otoh, are a little jem. Basically unknown even in Italy outside Bergamo, they are made with the poorest ingredients: filling is pretty much old bread crumbs, and in a typical Alpine tradition, pasta is kneaded with milk (sometimes even boiled) rather than eggs. And look how they flatten the little pasta rolls, one by one, differently from every other usual Italian dumpling. One thing that in Alpine valley you could find though is butter, that's what we proudly dress or dishes with. For how unknown and how poor ingredients are used for these tiny gems, they though taste delicious. Congrats for finding them, big Kudos to the scarpinocc Ladies. Long live scarpinocc, Serio valley, and unknown local traditions.

Those little shoes can walk right into my mouth. 😁 And - wow. If I wore such festive clothes and attempted to cook in them, I'd be covered in a colourful mix of stains within seconds. Even if I only boiled an egg. 😂 (Check the encyclopedia for 'clumsy' to see my photograph.)

The best spices for this recipe are Droga 'La Saporita', you can find them online. The perfect amount per serving is 12 and they taste even better with sage added to the butter, cook the butter until it's quite brown, but not burnt. If you make lots you can freeze them, for cooking from frozen put them in cold water, bring to the boil and cook as usual.

Thank you for bringing us all of these wonderful recipes, Italian food is just too good :) When I make pasta with butter and sage I put a little of these spices in with the Parmigiano cheese, mix and sprinkle over the pasta just before pouring the heated butter and sage on, that tastes good too :)

interesting, I see a pattern with northern Italians with using butter in their cooking and Italians in the south and the middle of Italy don't really use butter at all.....

You use what you have. There are lots of cows in the northern Po valley, while olive trees are widespread only south of the Apennines separating Emilia from Tuscany.

Yes, on the bottom shelf of most Italian supermarket spice racks are little sachets of mixed spice, similar to garam masala but without the cumin: cinnamon, allspice, nutmeg, coriander and anise. The brand is called Droga La Saporita. best wishes, Vicky

hi Cheri, I understand that the first mention of a tomato in Italian was in 1548 and subscriber Maurizio Costa says there first recipe which included them was in 1820 - so it took nearly 300 years to become popular in the kitchen. Italian cooking still has a wealth of recipes that don't include tomatoes. Meat sauces which do not include them are called 'al bianco' or white. best wishes, Vicky
