In this first episode of a series dedicated to fresh pasta, we are practicing with ravioli. A pasta spread throughout the Italian boot in many different shapes and fillings. In the hands of Gaetano Trovato, two Michelin star at the Arnolfo restaurant in the Chianti area, traditional stuffed pasta and creative takes become small treasure chests to enclose the chef's great passion for Tuscany and signature cuisine.

The good thing is that if you can get the right ingredients, you can do this at home. Cooking really good food isn't as hard as people think (I'm not saying you feel that it's difficult), I wish more people would learn how to make these sorts of delicious meals themselves. Quisine at this level shouldn't be exclusive to a certain region of the world as long as people have the means to make it where they are, I think that's a beautiful aspect of cooking
