Try mixing cooked chorizo with your refried beans. Just as good, or even a better option than the potatoes. Either way, they're BOTH delicious combos.

In my town in guanajuato, they mash the potatoes and add cheese, jalapeño vinegar, and the chorizo to them 😋 👌

I love the Pambazo but my wife hates it. She doesn't like the chili sauce. Maybe I should add some more sugar to it (I already tried adding some) to make it sweeter and less hot but that's not authentic. She doesn't like my Chili Colorado either because of the sauce. I guess I could also just make it and just give her a dry bun.

I am a bit surprised you did not coat the inside surface of the buns, cook, flip, coat and cook. I thought traditionally both sides were cooked on say a plancha. Nonetheless, this is my new favorite torta of late so super excited that you have a recipe.

Not gonna lie... this seems like Mexican stoner food. Potatoes and bread... pork and lettuce... It doesn't really make sense culinarily, but that doesn't mean it doesn't taste good. I'll try this the next time I take an edible.

You don't want to know🤭. But DANG is it tasty. Seriously, it's a Mexican sausage made with chili pods (not hot), spices and a variety of parts from the pig or cow. Just don't read the ingredients label and you'll be fine. Lol.

Pork is more widely used in Mexico (and in Chicago), but you can find beef

@@gitgeronimo9375... I prefer the pork chorizo. To me it's tastier than beef chorizo. Only downside is the pork renders more grease (depends on the brand) while it cooks. I usually put a paper towel on top to soak some of that grease out. The beef is still good though. A close second.

Hey Rick...great recipe....but don't try to accomodate the microwave crowd. I hardly EVER use the microwave to cook. I just reheat with micowave. For the potatos, just get some lightly salted water boiling and then dump those potato chunks in for about 5 minutes par/poaching, drain them, maybe lett them dry out a bit for two mintues, then add to choriso. That is what I would imagine the abuela would do!

The microwave does the same thing, but quicker. If it makes you feel more "chefy" to boil them instead of microwave steaming them, go for it. The results are the same. Also, if you're going to boil them, don't lightly salt the water. You're just boiling bland potatoes at that point. Season through each step. Boiling requires more salt.
