Ingredients
400g of frozen baby peas
3 sprigs of mint, chopped (plus extra for garnish)
½ cup Greek yoghurt (plus extra for garnish)
60g feta (plus extra for garnish)
2 tbsp lemon juice
Zest of 1 lemon
½ tsp salt
½ tsp cracked pepper
1 tbsp extra virgin olive oil (plus extra for garnish)
Method
1. Bring a medium pot of water to boil over high heat, adding a large pinch of salt.
2. Once the water is boiling, add the frozen peas and cook for 1 minute. Drain and rinse with cool water.
3. Add drained peas to a food processor along with the mint, Greek yoghurt, feta, lemon juice, zest, salt, pepper and olive oil.
4. Pulse to create a coarse texture. Taste, and if needed, add more salt, pepper or lemon juice. For a smoother dip, continue to pulse until desired texture is achieved.
5. Place the dip in a bowl and garnish with Greek yoghurt, crumbled feta, extra mint leaves and cracked pepper.
6. Serve with your favourite fresh vegetables or spread on sourdough toast.
