You can do it! I was reluctant to start working with balloons as well because I absolutely hate popping them. Thankfully it is a forgiving and fairly inexpensive medium. My best advice when making garlands, is make sure they are really dense even if that mean you have to make a smaller garland.

Because it is air filled, you could easily do it a couple days in advance. Keep it out of direct sunlight until you're ready to use it, as that degrades the latex faster and makes it look foggy.
