Tempering is more than melting chocolate Julia. What you guys had on your first attempt is what is called bloom. Moisture as well as cocoa butter had started to separate from the chocolate solids. Tempering is a process that helps with that. To temper you melt the chocolate so the cocoa butter crystals (alpha) break down then you seed (add in) the chocolate with already tempered chocolate enough to cool it down. Then you mix it in a process called tabling which cools the chocolate down and promotes the formation of crystals (beta) that will add shine (even distribution of cocoa butter throughout the chocolate) and structure (the snap in a candy compared to crumbly texture of chocolate not tempered ) to the chocolate. Finally you heat the chocolate up a few degrees to smooth out the texture and test the chocolate by dipping a piece of paper in. If it dries with a nice shine and has the snap instead of being crumbly then it is in temper. I am a fan of your videos from both channels but, wish you guys would do a little more research on some of the things you do.
