Very beautiful arrangements! Can you explain why you put chocolate on the skewer before adding the strawberry? Does it prevent the skewer from piercing all the way through?

From my experience, putting the skewer in the 🍓 when dipping helps you to keep a grip/ control of the 🍓 instead of holding it by the leaves which can detach from the berry and causes overall mess/waste. The skewer also gives you control when you need excess 🍫 to come off the 🍓.
