Generally, when I watch these types of vids, it's always so perfectly recorded. For once, it is so imperfectly perfect. Just like most of us would be when working in the kitchen. Batter on the side of the bowl, oil sprayed on the counter, the burp, foil wrapped like "I don't care as long as water doesn't get in", crack on top of the side of the cake, icing sugar everywhere, taking a slice of cake with a piece staying behind, a piece fell off the hands. It doesn't matter as long as you are having so much pleasure...Just love it.

"Mmmmmm. That's delicious"....takes another big bite.... I love how Emmy is not shy about taking a decent sized bite. Here's the recipe written out for y'all. : Jiggly Cheesecake Recipe (Use an 8 1/2 inch cake pan to bake the cake, wrap bottom with 3 layers of foil. Spray inside of pan with cooking spray. Line inside bottom with round of parchment paper. Line sides with 6 inch tall parchment paper) Melt together and cool: 130 mL milk 100 g butter 200 g cream cheese Beat: 13 egg whites with ¼ t cream of tartar When peaks form, gradually add in 1 1/3 cup sugar by tablespoons. Add to the cooled cream cheese mixture. 6 egg yolks and stir. Sift and whisk in: 60 g flour 60 g cornstarch 1 t vanilla Fold cream cheese mixture into 1/3 of the egg whites, then combine all together. Pour into prepared pan. Place pan into a larger pan and add hot water to the larger pan to fill up half the height of the inner pan. Bake at 320 F for 25 minutes. Lower temperature to 280 F and bake for an additional one hour and 25 minutes. Insert skewer into center and remove - the skewer should come out clean. Remove from pan and remove Cool. Dust with powdered sugar. Serve warm or cooled. Cake will shrink with cooling by about 20% of it’s height. (Emmy prefers it cooled - less eggy taste). Serving ideas: serve with fresh fruit, ice cream, or your favorite ice cream sauce. Make sure you use an oven thermometer - don’t trust the dial of your oven!

5:10 Suggestion: Spray your cooking spray into the sink. Any over spray goes into the sink where it will wash away as you are doing your clean-up. That way you don't need to wipe up an oily mess afterwords. *NEVER* spray over the floor. That will make the floor really slippery and you'll break your neck.

My grandma taught me to use 3 bowls when separating eggs especially when doing a lot. One bowl you crack the egg into and pull out the yolk and put into second bowl. Then pour the white into the 3rd bowl. You then start the process again. She explained that this way if you do happen to pop a yolk you haven’t ruined the whole batch of whites and only have to replace one egg rather than start completely over again.

Hi I made this after following your instructions and it came out perfectly ! My coworkers love it ! Ps the ingredients were perfect except for the baking . I had to bake it on 350 for another 30 minutes to have the cake cooked through .

Looks amazing. Love the results! A couple things I would suggest for anyone with chemical sensitivities. Parchment paper contains fire retardant forever chemicals. Amazon has a 15cm high adjustable cake ring that you can place inside your springform pan. Go one size higher for the springform pan because the ring handles take up at least a 1/2 inch of the pan diameter. To prevent sticking, butter and powder sugar the bottom of the pan and pan ring. Do not use flour. The cake will not stick to the sides so there is no requirement to use a knife to pull the cake from the sides whatsoever. I always boil water and then put the pot in the oven with the cake. It seems much easier than using foil and the double pans. As for leaving the cake on the metal base, once the cake has cooled enough to stay firm without saging, remove the metal pan base otherwise your decadent cake will adopt a metalic taste. Raisins in the recipe??? LOL Good decision to remove them from the recipe.

Some time ago I watched this recipe on a video from India, a bakery selling to the public, I watched with jaw dropped amazement as the news paper instead of parchment paper was peeled off the cake, and a couple of very large rats ambled across at the back of the work bench was totally ignored by the very dexterous young man doing the baking, and damn me he didn't burp once. give me Emmy in her spotless kitchen burps and all, I love her channel.
