If the clutch pack is pressed against the springs seen at 2:43, how does the clutch arm moving towards the transmission from the back, disengage the transmission??

The way I understand it. Is that the the foot pedal to engage the gears, you are also engages a actuaptor on the lower section of the clutch arm. If you look at your clutch arm and change gear, you can see theres a lower rod that slide in and out slitely. This coupled with the clutch leaver enables you to change gear. I hope that makes sense.
