I love what you did here, but as a former Godiva worker, I'm not surprised your result was not very similar to the original. Real nougat is made of boiled sugar syrup and egg whites, mostly. The sugar is boiled to a hard-ball consistency. Of Course cool whip and chocolate whipped together won't have the same flavor and consistency; it's basically whipped ganache. However, I love the idea, it's a great way for people to dabble into chocolatiering.
@kameljoe217 ай бұрын
When it made is it like a souffle? From the ingredients list it calls for sugar, corn syrup, cocoa powder, palm oil, salt and egg whites plus artifical flavor. They must whip the sugar syrup and egg whites really fast to prevent cooking the egg whites or do they let the sugar cool before this process. I kinda wonder if they mix the cocoa powder, salt, oil in after the initial whip? Godiva makes one of my favorites ice creams, the chocolate raspberry.
@lovepeace99026 ай бұрын
@@kameljoe21I'm quite sure they let it cool enough so that the eggs wouldn't cook (they cook in seconds in hot sugar or sugar butter mix) but not too much for it to harden. I add the eggs when the sugar mixture is hot/warm but doesn't burn my hand or tongue when testing it.
@kameljoe216 ай бұрын
@@lovepeace9902 I later learned that the innards of the bar is a nougat and you can follow the general instruction on how to make a nougat. Or you can try it from the description on wiki. What is the nougat in 3 Musketeers made of? Manufacturing. The candy is made of a whipped nougat mousse formed into very large slabs, which are cut to size and enrobed in milk chocolate. The nougat chocolate center is made by whipping egg whites until they are light and frothy. Sugar syrup is then added, stabilizing the foam and creating mousse. Ingredients list of the bar: Milk Chocolate (Sugar, Chocolate, Cocoa Butter, Skim Milk, Lactose, Milkfat, Soy Lecithin), Sugar, Corn Syrup, Palm Oil, Cocoa Powder Processed With Alkali, Less Than 1% - Salt, Egg Whites, Natural and Artificial Flavors. My best theory on how they make it: Milk Chocolate (Sugar, Chocolate, Cocoa Butter, Skim Milk, Lactose, Milkfat, Soy Lecithin) and Palm Oil makes the coating for the bar. Sugar, Corn Syrup, Cocoa Powder Processed With Alkali, Less Than 1% - Salt, Natural and Artificial Flavors makes the syrup. This stage maybe heated yet unclear. Recipes I found call for hard crack stage 300f to 310f. Egg Whites makes the fluff. The bar is quite simple. The only things that a person might not find are the natural and artificial flavors which I am sure are used to enhance the coating flavor and the center. Its super unlikely that even a call to them would result in them telling you what those chemicals are. Though one could try.

The down side to using coolwhip ganache is that it doesn't hold it's shape unless you freeze it, and coating it with chocolate has such a temp difference that it will seize up. I had to dip mine directly into a pot still on heat. It's also not shelf stable at room temp and requires constant refrigeration. The upside is they do taste good and don't last for long once the family knows what's in that container. For people who like eating chocolate directly out of a freezer (thin mint fans), this is the perfect recipe.

There is a better quick nougat recipe that might work better for this. 1 bag marshmallows 1/2 bag milk chocolate chips and 2 tablespoons malt powder. Melt all together and you will end up with a nougat center more like you're looking for. Pour into lined and buttered/oiled pan and put in fridge or freezer. Once set cut to your favorite size and then use the candy bark to coat. Its not quite as light as 3 musketeers but the flavor is there. It might be a matter of tweaking the marshmallow/chocolate ratio. Ive used this marshmallow/chocolate combo to make several different nougat centers. To make brachs white jelly nougats its just 1 bag marshmallows/ 1 bag white chocolate chips with cut up Dotz in(or fruit snacks my mom preferred the fruit snacks) For a peanut butter nougat its 1 bag marshmallows/ 1/2 bag white chocolate chips and one cup peanutbutter melted together. Then pour into a mold. Then I put melted caramel and peanuts on top and back into fridge then cut and dip into chocolate and its like snickers bars.

Outstanding options for people who don't have cool whip available. I suspect your version will be more shelf stable as well, because I've made the cool whip version before (taste of home recipe) with dark chocolate and it's impossible to mold into shapes that will hold and tends to stick to your hands even when approximating frozen. Mellon ball scoops it came out rough looking and refused to release even after I coated the scoop with butter. Attempting to roll by hand deflated them. Emmy's tray method is pretty much the only way that makes sense. After they're made, they continue to require refrigeration, making them more difficult to package as gift baskets for Christmas or Easter. The upside to the cool whip version that Emmy made- it's extremely light and fluffy and was the perfect 1" x 1" bite when I'd keep them in the freezer or serve a few as an ice cream companion. Defrost time is like 5 minutes. They last 3 months in the freezer if people don't pounce on them in a week of midnight snacks. I stumbled onto the cool whip version on my quest to concoct some more varieties of truffles that weren't so heavy. Most recipes call for sweetened condensed milk, which is far too sweet. My base for truffles was cream cheese. Very dense. Exceptionally rich, smooth, creamy, with a glossy melt in your mouth feel that really brings out the best in high end dark chocolates like Ghirardelli or Lindt. Can't eat more than 2-3 at one sitting.

I am now pre-diabetic so I have to substitute these ingredients with sugar free chocolate chips, low carb, low sugar Cool Whip(or something similar to Cool Whip), and then sugar free chocolate for covering(unless that Almond Bark is sugar free and low carb. I find it fun and challenging to substitute ingredients I used to be able to consume!

The original may be made like a real nougat. I think that's made by heating sugar and corn syrup to the soft ball stage and whipping it with whatever malt powder and chocolate they use. Real nougat is soft but chewy. Your version is basically frosting with air whipped in. It probably tastes a lot more of chocolate than the original 3 musketeers does. Both seem really delicious in their own way. There's probably a how it's made video for 3 musketeers. Reminds me of all the candy dupes Claire Saffitz used to make on Epicurious.

How long ago was that? I remember getting Three Musketeers as a child in the 60's and it was only this one flavor. But, maybe it changed in different areas?

So many chocolate bars I ate as a kid are no longer around. I wasn't much into sweet things but I loved Virginia chocolate bars (chocolate and peanuts) and Treasure chocolate bars that had I believe 6 or 8 different fillings in each piece.
@MsDana-mo9fp7 ай бұрын
So, made these bars & I made one batch with milk. Chocolate chip with cool whip & used a dark chocolate bark for dip. The next batch I used half chocolate chip & half peanut butter chips with peanut butter instead of cool whip!

Because I developed a nut and peanut allergy when I became an adult it made it to where I can't eat a huge chunk of candy bars. I also have a gluten sensitivity so things like Twix are a no go as well. When I discovered that 3 Musketeers were actually something I could eat without hives and stomach pain I was thrilled, and I really developed a liking to them. Nougat is amazing. I just wish that Milky Way would bring back their french vanilla bar with vanilla nougat. But I really think you should try to make marshmallows, Emmy! I made them once and homemade gourmet marshmallows are very different to the store bought ones and you can make them in so many flavors.

I would use semi sweet baking chocolate and whip up whip cream and add powder sugar mixed in. I also would fold the whip cream in gently into the melted chocolate. I would like to try it. And I feel the same about Marshmallows

I always thought the original candy bars were way too sweet for my liking. That's why I always chose "ZERO" chocolate bars due to their bittersweet chocolate taste. There's way too much fructose in candies today and by the mid 40s people are getting diabetes already due to the excess glucose in the bloodstream. It is nice to see that one can actually make their own chocolate bars are home though! At least this way one can control the sugar and the ingredients in the candy bars! Great video!
@mygirldarby7 ай бұрын
Sugar doesn't cause type 2 diabetes. It's caused by being overweight and genetic propensity. In fact, studies show that eating a lot of red meat dramatically increases your risk of type 2 diabetes. But "glucose in your bloodstream" does not cause diabetes. The American Diabetes Association has a FAQ about it because so many people don't understand that sugar does not cause diabetes.
@codename4957 ай бұрын
Diabetes is an autoimmune disorder not something caused by eating sugar. You don’t like them nifty, don’t eat them. Dont spread nonsense about health in the interim. ALL forms of diabetes are autoimmune in nature. Either spontaneous like insulin dependent and childhood diabetes or endocrine like insulin resistance, type 2 and obesity related diabetes.

00:55 "I am definitely a Snickers girl bar"?? LOL!! ❤😉👍 I'm wondering if it would become closer to the flavour of the original's chewy center if you took some of those chocolate covered malted milk balls and crushed them into the chocolate/Cool-Whip mixture first... waddaya think? Maybe even with a teensy dash of instant coffee... hmmm... okay, now I'm hungry! LOL

When I made them I used 8oz melted chips per cool whip container, and left the chocolate in the flaky state while mixing the two ingredients. I found it to be more like the original candy bar not overwhelmingly chocolate . Also , adding some roasted salted nuts on top, peanut butter chips or other toppings to take them a different direction . Enjoy

I'm such a weirdo.... I use to love 3 musketeers, except, I would nibble the chocolate off from around the outside of the bar, then throw that away and just eat the middle 😂😂😂
@cujoedaman7 ай бұрын
Quick Tip: To get the shiny chocolate coating, always temper your chocolate in a double boiler on the stove. The microwave works fine, but something about the speed and the way it melts the chocolate changes the structure of the sugar crystals (I can't remember the specific science behind it), but tempering over a stove will give you the shiny chocolate.
