Do plants grow faster in bigger pots?

Thank you for this! I always wondered about this because Enid said her seedlings grew bigger quicker when they were potted up compared to those in seedling trays.

I agree with that statement. In that situation a tiny seedling is so flimsy. The quicker you get it into an appropriate sized pot for it, it can grow roots and stabilize a little faster. Once it’s stabilized it’ll grow faster. With a larger plant it will have a pretty established root system and won’t be as flimsy in the new pot.
