Stocked trout are nasty. The brook trout are alright. But, that it. I like great lakes steelhead brown trout though.

Stocks over about 14" with some lemon pepper, salt, and butter are pretty damn good. Cook the whole thing in foil without the guts of course, gives a little extra juice.

A lot of people don’t realize that stocked trout can be very very delicious. what happens is they don’t take the necessary steps to make the fish taste amazing. Typically when I harvest trout, I bonk them and pop their gills, afterwards I place them in a cooler with a slurry if ice water and salt. They stay at fresh and get a slight cure, depending on how long they are in the cooler for. The purpose for the slurry is to firm up the meat and keep it from going MUSHY most People put their fish on a stringer and leave them in the water. The best way to really enjoy them is after they been in the ice slurry is to remove all the slime by scrapping it off with the edge of the knife, then gutting it and then you can fillet it. Or cook it whole. Personally, trout grilled over hard wood charcoal is the best and I dip them I’m in lemon butter with dill while I’m eating them.

If you guys thought that wasn't bad, then you'll probably like it if its actually cooked well. Burning it in some foil with seasoning salt and spicy chicken rub is hardly making the effort to make something taste good lol. YOU DIDN'T EVEN BRING BUTTER?!? Trout isn't salmon, but its still tasty, especially if you try to make it appetizing.

Fish snobs. I smoke salmon and steelhead that I catch in the Clearwater, I go to the coast to catch and can my own Albacore, and I go to local ponds to catch and eat stocker bows. Gut them and cut their heads off, cut slits on each side, rub on some olive oil, sprinkle on some Tony Chachere's Creole seasoning, throw directly on the grill (no foil) until skin is crispy and the bones pull right off the flesh.

Clorado native here! Grew up throwing back pretty much anything but trout. Trout is a delicacy, 1st running that knife up the blood line breaks the ribs, making it harder to de'bone. Run your thumb nail. Cooking it? Scale the fish. Foil if you have it: minced garlic, dill, lemon wedges in the gut (optional) salt, pepper, butter and or olive oil, dill sprigs. If in a foil packet, flip the whole packet indirect heat. If no foil packet than grease the grill, and cook low heat and still use indirect heat do not flip, you'll destroy the fish. Once cooked firmly pull the head back slowly, using a utensil to separate the meat from the thin bones. You'll have a delicious fish. Exposing it to smoke is a great addition.

They taste better by not putting the line thru their gills after being caught. Keep them alive with a basket. Then knock them out and cut their gills. Bleed them out. Set them in bucket of ice. Hour later they are semi soft and gut them. Descale them. Add lemon. Pepper. Seasoning salt. Alittle butter. Wrap them in tin foil. Bake them. Taste good with a whole tomatoe and steamed rice. I eat them with Tabasco sauce or hatch green chile.

2nd way, cast iron pan with oil, heat up. Clean out trout cut slits on sides, drop into a ziploc bag with cornmeal, lemon pepper, garlic POWDER, and your other choice of seasonings and shake trout inside ziploc bag with ingredients til coated evenly. Then remove by getting trout by the tail and slowly put it into the hot oil in the cast iron skillet and fry til golden brown. Serve on top of white rice and squeeze FRESH lime juice and salt and enjoy.

Only kind Ive ever had are stocked. Many different ways to cook them, but I must say, I have never seen anyone put oil in the fish before, and I dont think i will try it. Butter yes, but Crisco?

I vacuum seal the trout with seasoning and throw it in the freezer. Put it in the sous vide at 120 F for 30 min and then throw it on the skillet for a minute. Tastes really fresh that way.

Mix water and brown sugar and salt soak the (skin on/boned out) fillets in that for 24 hours then toss them in the big chief smoker (skin side down) and drizzle a bit of honey on each fillet and sprinkle a bit of johnnys and smoke them with some alder/apple wood chips for about ten hours. You’ve got yourself some Indian candy lol 🤘 The holdover bigger fish are bright red good meat. The fresh stockers ain’t that good but they’ll smoke up ok. This also works money for Steelies or any kind of salmon.

Just a tip of that cooking process. Instead of the spatula, just flip the two pieces of foil. The top now becomes the bottom... And the fish stays intact. Almost that time for us ....

try cooking them in the foil with some seasoning like what you used but add some lemons and or oranges inside the fish while cooking. A small chunk of real butter is great as well. Delicious - cook mine over the campfire all the time.

Ate stocked and wild salmon recently that were both caught on the same fishing trip. Hands down, the wild tasted 100% better. Meat looked more appealing (pinker) too after filleting. Have also eaten stocked rainbow before and I haven’t been impressed. Then again, maybe my cooking skills just suck.

Stocked trout is just about all we can catch around here sadly, almost all of our native trout were fished out. It’s nearly impossible to catch native trout here now. So I’ve just found tons of different ways to make stocked trout and it can be delicious.

Lol there is a huge difference between trout and salmon and even though steelhead are just sea run trout there is also a big difference between a stocker rainbow and a steelhead even. If you really think they are the same you dont eat much of both.

why waste the time with a bonk and bleeding them out . I normally just get my Pointing finger , Put it under the top of the mouth and Then Snap its neck Back , its a quick and easy way to kill and bleed out a trout of that size. looks better on the grill too. Plus you forgot the lemon!!!

I visited a friend in Connecticut a number of years ago when trout season opened. It was a great experience, we had breakfast in a firehall, fished a river then a pond. I took home about 6 fish and when I cooked them up they tasted like mud - was disappointing....

Smoking the stockers is the way to go. But the tasty stockers are the ones like Diamond lake has...with that lake's food supply the stockers taste better after they have become holdovers from the previous year and also grow an inch per month, I can't wait to get those in the frying pan. Excellent lake to fish early in the year.

I use stocker trout as fertilizer for my garden. I bury about 30 in my vegetable garden every spring and let them decompose and then till the soil come May. Excellent fertilizer. I try to catch and release as many as I can but trout our notorious for swallowing the hook.

For me and where I'm from, we don't have Salmon nor do I like Salmon anyway. Sorry, but here we have Trout and we have Rainbow and other kind of Trout. Trout is delicious and from what I understand Rainbow Trout are the healthiest to eat. Either way, I like Trout. Good stuff.

Stocker trout is the only thing we eat here in SoCal. Our waters are so dirty. Figure the stocked trout are only in the water for less then a week or so. This also goes for catfish.

Bunch’a spoiled salmon fishermen scared to eat a little stocked trout. I grew up catching and cooking stock trout over an open fire in the eastern Sierra rivers in California. Still working on salmon and steelhead in the Sacramento and American River. Love your content, guys. Keep up the good work.

I usually dont eat pond trout. But if I am up getting those stockers (especially the larger holdovers) in the mountain rivers, I just gut them and clean them very well. Sea salt and fry em whole. Or steam them with some Thai Basil, or Ginger and Lemon Grass. Cooking them with seasoning salt on tin foil just seems terrible.
