That is such an excellent question, as there really isn't anything that I can think that is similar! It originated from what is called sarsaparilla, which comes from the sarsaparilla root (where the name "root beer" comes from), any chance you have that in Australia!?

I have noticed over the years that when I pull meat off the smoker is that it tastes bland until the next day. I have since figured out that when I pull the meat to rest to go take a shower. I realized my nose was overwhelmed from doing the smoke so it killed the flavor. This has helped considerably. BTW the shoulder looks awesome.

I truely appreciate this comment! I really LOVE the process of smoking. I love to see my family react to my cooks but, on a personal level, I almost always get "sick & tired" of the cook and don't enjoy the fruits of my labor on the same day... Maybe cleansing my system with a quick shower while the protein rests will cure me of the malaise I feel...

This sounds amazing guys! And you know I love to see you on the pellet grill! I have not done this yet, but it's going on my list! There is so many ways and so many uses for the leftovers! Butt, here is how I like to do mine especially if I get a later start. I cut that butt into chunks! I cut the area with the bone. Then usually quarter the rest depending on the size of the butt and smoke it! It usually only takes 4.5 to 5.5 hours at the same temps, same process! Butt a lot less time!!! The bonus you get doing it this way is you get more bark! It pulls the same and of course tastes the same and you also can get a "Smell Yeah!" Start at 10:30 and it will be done and rested for a couple hours or when you are ready to eat! Cheers..... My Brothers!
@waltwins
@waltwins 2 жыл бұрын
EXCELLENT IDEA BROTHER! For reals, we've always just considered leaving it all in tact - and your method works, because the meat isn't getting any more smoke after a couple of hours, so you really don't lose anything!

I've done SEVERAL pork butts over my years of bbqing. I love to spritz with a half Coke, half apple cider vinegar. Side note for those who are curious, pellet smokers are nice and ultra-convenient but nothing compares to the flavor of a stick burner. Way more work, but amazing flavor.
