im from new orleans. imagine going get all the ingredients for a good gumbo. taking all day cooking it ands its too freaking salty. a solution that is freaking reliable, is to drain the pot through a colander keep the juice and separate the solid ingredients. if its horribly salty or spicy u can even wash the solids off in a colander. then reintroduce the liquid u saved as u go
