How about constructions like "Wish you were here"? It uses first type despite the fact that we're talking about other person.

Good point. For normal things like that, you use the first construction that I gave you. "Wish that someone would" is usually for wishing that they change an (annoying) behavior.

You can use different tenses depending on what you want to say. Have you watched the "hope" video yet?

Yes. It doesn't affect the meaning. In writing, you should always include it. When speaking, you do not need to.

1 and 2 are correct, but they are slightly different. The same is true with 5 and 6. 3 and 4 are both incorrect.
