VegasDon 711 here. You mentioned the cabins. The cabins were built with Valley of Fire sandstone by the Civilian Conservation Corps CCC in the 1930s. The cabins were for travelers. Today, it is a picnic ground.

711 here Elephant Rock is an arch. The trunk portion is very slender and the back portion in massive like a body of an elephant. The internet says it can be seen from the road. You did capture it in your video it is high up on the ridge on the right. There is no sky behind the arch only red Rock which makes it very hard to pick out. From the direction of your driving, it is very hard to pick out Elephant Rock. Perhaps if you were coming from the opposite direction there might be sky behind the arch making it easier to see.
