ive also been obsessed with roasted veggies!! i also moved into an apartment so im cooking more, and my favorite combo is cauliflower, broccoli, and brussel sprouts!! then i also use my rice cooker and make quinoa and top it with hummus. its AMAZING!!!!!

I haven't thought much about my new year's resolutions but on top of my head I would say that my top ny resolution is to be more kind to myself. I've spent all my teenage years and part of my "adult" years basically bullying myself but since 2021 I've started paying much more attention to what I say to myself every day, especially when I mess up or something doesn't go the way I want. In 2023 I will treat myself like I'd treat a good friend. No more self bullying! (I'm sorry for any mistake, English is my second language)

So i am in school rn So accordingly my new year will be after my exams (new class) But There are some resolution i made for this year • i wanna focus on my mental health . Prioritise myself . Reading book . Dance half an hour a day and Actually last year was a shitty year i didn't prioritise myself that much ,i stressed myself too much so this year i wanna prioritise myself more . Progresss..... My roasted veggie recommendations: 🫑🥒 try stuffed & roasted bell pepper and zucchini! You can fill them with rice, tofu, meat/meat substitutes, egg, other veggies, cheese ... whatever you can think off! 🍠I also like roasting thinly sliced sweet potato rounds (esp the one that's purple on the outside but yellow on the inside) for a snack or side dish. The thinner the crunchier, but thicker chewy slices are also good. 🌱(not a veggie, but still:) roasted tempeh is really good too!- (I believe it's vegan as well) Plain or marinated.
