I worked for an Izakaya, Japanese Sake Bar with cuisines. That's speciale was a Dojo-yanagawa nabe, hot-pot with handled dojo (loach) with shredded burdock (Gobou) with sweet soy sauce and eggs. It was so good! So great, nice tasting report, Chris! Drinking sake using wooden cup "Masu", kind of measure cup, especially drinking sake, this is a best way to enjoy its taste, matured originally with cider cask, so if you drink with it, you can enjoy its true meaning of original, woody-fragranced taste! Yes I love to drink sake out of the wooden cup. it adds to the fragrance and flavor and experience of it. I was nervous about trying dojo nabe at first but the flavor was so good I forgot why I was scared to begin with!
動画の後半に出てきている「味噌田楽」のこんにゃくですが、なぜ「白いのか?」っていう疑問があると思いますが、その「白いこんにゃく」が本来のこんにゃくですよ~♪ いつも見ている「灰色のこんにゃく」はこの「本来のこんにゃくに海藻(ひじき等)を混ぜ合わせて作ったものがグレーっぽい色を出してます。というちょっとした雑学でした~。 (English ver : The konnyaku from "Miso Dengaku" in the second half of the video, why is it "white?" I'm sure you may be asking yourself, "Why is it white? The "gray konjac" that you usually see is made by mixing seaweed (hijiki, etc.) with the original konjac, which gives it a grayish color. That was just a little trivia.)
