So, did he hit the volley down the middle to go to the backhand of the opponent or because for either handedness I would want to go down the middle?

Down the middle is a great target regardless of handedness.

If you're hitting down the middle with your poach then won't the defending side just leave it to the guy on the baseline to hit it back? If the opposing net guy is close to the net then just hit behind him away from his partner, if he's on the service line then aim at his feet (if you're playing nice), if they're both at the back then just hit as wide as you can or even a drop volley.

If the poacher does a good job of moving at a diagonal towards the net and hitting the ball cleanly, it'll usually rob the baseliner of too much time. They might be able to get the ball back but it would probably be a weak reply.
