John is not the man he is in 1911 because R* explicitly decided to make him behave differently, probably to keep rdr1 players away from prefering him to Arthur. Im pretty sure it has been established that R* originally planned to have him be much closer to rdr1, just like how his relationship to uncle was but they scrapped that too, now john is just uncles bully victim

It has redemption in the title for a reason after all, and more importantly is it's clear that with some post-time skip cut-scenes of John meeting other peoples Arthur also did, like the one with Rains Falls, Arthur was intended to be a fairly good person by the end. Also iirc, was the side quest with Charlotte one you could actually choose to walk away from after you first approach her, or does the game force you to take the stranger mission if you get close enough? A bit fuzzy on that one, haven't played it in awhile, but if that's the case then that also would imply Arthur is intended to make that choice himself. Arthur definitely is implied to be more so high honour in the end than low. For John I'm not as sure, can't speak as much to him. I guess his death can be viewed more like a low honour one? Dunno. Regardless, I'd say although not the canon ending(as the ending is the players choice), the high honour ending and go for Arthur is the.. more accurate, ending for his character story-wise by some implications.
