Spoiler alert! knowing what I learned about the significance of antioxidants and polyphenols in fresh coffee, I had no choice but to buy my own roaster. So I will be making my own delicious fresh-roasted coffee! I'm super-excited about sharing my discoveries! Cheers!

Up until this video, I considered my keurig to be a blessing as I can make one 12 oz cup of Kirkland by Costco (Read affordable) no waste and no fuss. But I have noticed a slip in quality which I chalked up to monetary inflation pressures on the manufacturer of the k-cup. So tell me all about roasting coffee.

I read a study that said filtering the grounds through a paper filter improved the anti-diabetes benefits of coffee. (Again) I think it had something to do with specific polyphenols. Really interesting topic Chef.

My favorite is organic coffee from Kenya, but it has been very difficult to find much for a while. I have been enjoying Ethiopian coffees lately. I started buying green and roasting in 2016 or 2017. I bring my French Press ans coffee with me on the road. I got tired of buying coffee at gas stations and tossing.

So can you purchase a large bag of coffee beans, and only take out the amount of beans you need for a few days, roast them yourself, grind them, and use the ground coffee grounds as needed. Actually I cut back on coffee recently and I’ve stopped CRAVING it, but I still do enjoy a cup on occasion.

Just came across your channel. You're very knowledgable, such fantastic information! I love coffee, drink it black and prefer dark roast, so flavor is key. Do you have any recommendations for online roasters who ship? We're on a budget, but the coffee we've been buying for a long time has become funky tasting, cannot even describe it. Thank you ! You are very kind and I appreciate that. You and I are in the same boat. So much so that I bought a semi-commercial sample roaster and I roast my own beans for the same experiences you have had. I spent a lot of money trying to find good beans and they are always hit and miss. Unfortunately the only semi-decent affordable beans I recommend are Ruta Maya but after roasting my own, it puts them to shame. To make a better cup experiment with grind size. Weigh out the water and the coffee. I now do 8.5 grams to 150grams of water. My grind is actually pretty fine like a few notches courser than espresso. The darker the roast, the courser the grind for drip. Also I find that coffee tastes way better through the clever dropper. I bought it on Amazon. 205 degrees F and a four minute steep time

I have had a hard time finding good coffee out there. The problem is not so much with the roasters and the quality of the beans they serve or their freshness. It is that coffee is so end user specific. Who defines what is a good cup of coffee? Some people really love Starbucks. I hate most of Starbucks’ roast. They are a billion dollar company. Clearly I’m wrong. If you got to a Starbucks Reserve location they roast the beans right there and there are pipes that deliver the beans to the baristas who grind them and serve them. Literally can’t get fresher coffee than that? I hated the taste. Every small town roaster that serves coffee sell their beans as well many of them online. There are hundreds of online roasters that sell great quality coffee, but your taste is different than mine. It’s subjective. Great video! I am wondering about frozen freshly roasted coffee. A lot of baristas and people in the coffee world swear by freezing coffee shortly after roasting to slow down the degassing, oxidation, and to preserve freshness and taste, only taking out a few days worth at a time. Will such beans really lose their health benefits being freshly frozen?

@@AwareHouseChef Yes, degassing is good and at room temp it occurs in a day or two for darker roasts and up to 10 days for very light roasts, with most medium roasts degassing within 72 hours. When all the carbon dioxide escapes, there will be very little carbonic acid in the coffee. For espresso, trapped CO2 is an issue because the high pressure causes the CO2 to form a noticeable amount of carbonic acid, which tastes sour and even fizzy. For brewed coffee like filter drip, it’s much less of a problem and the trapped gas makes the coffee taste a bit extra sour but also fresher or brighter, which some people like. To my knowledge, freezing slows down the degassing but doesn’t stop it. This seems to be a marker of freshness, ie the less it has degassed, the closer to the original freshness it is. You can take the coffee out of the freezer for a day or two to finish the degassing before brewing in any case. Some coffee experts like James Hoffmann have talked about freezing coffee and said it works to preserve flavor, and can even mute the bad flavors a little. However, I don’t think the polyphenols and antioxidants have been properly considered! I roast my beans fresh and freeze them in mason jars, it works great and the coffee tastes great. I always assumed that because the coffee stays fresh, the health benefits remain intact as well, but I never considered that the low temps could potentially strip the coffee of the benefits. I suspect it’s more or less ok, like with other frozen foods, but it’s a great question to find out.

This is interesting and informative, but for me a cup of coffee (organic decaf), brewed in an Italian moka pot, is just a vehicle for the butter and egg yolk that I add to it. 😊

The jitters are also so.ply from the caffeine content, not just fungus. An darker roasted coffee can be highly acidic, which can be bad for this with health issues. Green coffee is a good thing. But many coffee in USA uses harsh chemicals to prepare. This cancuase nervousness too.

I have been trying to nail down a roast from Rwanda Nyamasheke. I almost gave up on it then I went darker and it is magnificent. I lean more towards African beans. Cheers

I haven't read through all the comments but, my favorite coffee is Costa Rica Dark Roast. Doesn't seem likely I'll ever give that up. What about K-cups?

Unfortunately, unless you’re adding your own grounds to do the filter basket that comes with it, were really are adding quite a bit of plastic to our landfills when we use K cups, so I’m kind of against them for single use. All the best! By the way, I’m really enjoying Costa Rican coffee myself. But my favorite been to roast is Rwanda.

Typically, you want to have your coffee unroasted, as this carbonises all the goodness. Or best to have 50/50 roasted and unroasted if you need the taste or add chicory etc for flavour. Grow and dry your own coffee beans, dry and grind/pulverise to powder, make Greek coffee ('don't boil' to death, let it rise then pour into short cup) this is best way to capture all the goodness. You can also add spices (500mg of each - true cinnamon, ginger, cloves, cayenne pepper, chaste tree berry or Hawthorne berry powders), bring to boil for 30 seconds pour into cup add tablespoon collagen then add Greek coffee with cup of warm unhomogenised milk (don't' boil milk) makes beautiful healthy cup of coffee.

I will look into it. I think if the polyphenols and antioxidants can survive 200C I can’t imagine that hot water would destroy them . I have no idea. Will do! Cheers!

I would like to know more about the fungus you mentioned. I drink k-cup coffee right now only because of convenience. I used to be more concerned with flavor, but while I’m working I don’t have time for fresh roasted 3 days later coffee. I shudder to think about how bad coffee pod coffee is, health-wise. You can get an excellent middle-ground between espresso and french press coffee using the Aerobie coffee press. That to me is the epic flavor and if you press hard you can get some of that foamy cremma (?) at the end. One option instead of chasing plyphemols relative to time after roast, you can get green coffee bean supplements that would help ensure you’re not throwing out 4 day old coffee beans because the polyphenols have left the party (potentially).

Air tight containers work very well even for degassing. As the CO2 is released the canister will need to be compressed slightly.

The best Organic coffee that I have found is online. They roast it and then wait 48 hours before they ship it and then I get it five days later. I vacuum seal it with my food saver right away and put it in the freezer.

This is very interesting. I found coffee quality extremely variable until I tried Nescafe, which is a freeze-dried coffee. I absolutely LOVE this stuff. It tastes super fresh, and when you drop the coffee in the hot water, it makes a "crema" (the super-fine brown foam) just like a fresh brewed cup. I imagine this "could" change if Nestle drops their production standards, but it stands to reason that they can control how old their beans are when they get roasted, how long they wait before brewing, plus I'm sure they have super tight control of brewing parameters. I get their special dark, but they make several different flavors. A Brazilian I know turned me on to this stuff, and it is now my standard coffee. I wonder how it would stack up in your evaluation here for antioxidant levels, etc. Curious.

Only Nescafé gold is freeze dried Everything else is spray dried, and that results in bit of a loss of flavor.

I am not sure about what the freeze drying process does to the antioxidants. I do know that I make a Greek beverage called frappe from the instant grounds and it has not changed, ever. Cheers!

@@weddingdresssaledenver7403 Thanks for the update. I was curious to find out more, as I've never seen Nescafe Gold in the supermarket. So I went to the Nescafe web page to do a little digging. According to Nestle's FAQ, the Nescafe Gold product is not available in the USA. But they also say the (presumably pertains to the USA specifically) products called Clasico are spray-dried, and the "Taster's Choice" products are freeze-dried. The coffee I made my glowing comments about was the spray-dried product, so I can't wait to try the Taster's Choice version... Thanks!

I have been drinking coffee for approximately 50 years, I just can’t see all this coffee worship going on right now I think it’s ridiculous. My great grandfather drank roasted pre-ground Folgers my grandfather drank Folgers my dad drank Folgers and I drink Folgers and I’m perfectly happy. I do want a coffee grinder I do buy whole bean coffee and grind it as a treat but for my 8 cups a day I drink Folgers.

So have I (40 or so years). Same brand of coffee that we’ve served in our restaurant for 46 years, Vassilaros. Having freshly roasted coffee makes you feel differently. The pep comes from the nutritional value rather than the caffeine. That’s my experience. I believe in it so firmly that I roast my own now . All the best

Coffee beans have become expensive. I’ve cut back on the fancy stuff and started buying Mother’s brand. SoCal here. But may look for a coffeehouse around here for prices. I love my butter coffee 😊

I recommend that you look for a local roaster who roasts there beans fresh and sells them with a one week expiration . My local roaster does that and he does ship but he only does a very dark roast www.aldoscoffee.com

Many coffee roasters are shipping coffee with roast dates on them . It may be more pricey but it’s best to have fresh roasted coffee

If this is the case, then the research done on coffee had to be done with the type of situation mentioned here. I doubt that was the case on most studies. Most people drink instant coffee.

To the best of my understanding it shortens the life span of the antioxidants in the coffee. Same thing happens with biophenols in olive oil. Cheers

SO Nescafe INSTANT coffee is probly the WORST COFFEE for your health? I used to drink about 4-6 cups of coffee but weened myself down to only drink about .5 to 1.5 cups a day of this Nescafe instant

Living a life need not be so calculative on accuracy, even on what you said is correct ,you said don't drink this and that, then there are others out there will say you can drink this and that. There are so many different views on everything.The best thing to do is not to follow what you people said. Do it naturally when the things comes. Consumed a little of everything is the wisest. Don't have to make life. miserable.

@@AwareHouseChef the thought now is freezing your beans is fine if its stored airtight and not allowed to thaw. Not sure exactly how long is considered ok but Ive heard of people freezing beans up to a year and it’s still great. The main concern is letting the beans thaw and condensate and then refreezing the moisture. To counter that you can freeze single doses so you go from freezer to grinder and not give the coffee a chance to thaw. Im not sure youtube allows links in comments anymore but if I can find them I will find a few videos that explain it better than I can here.
