I'm sure someone else has answered or the question was rhetorical; but cattle (and plenty of other animals) do the whole "sniff something and open mouth in a funny way" thing. Its called the Flehmens response. Basically it helps the animal better detect specific hormones given off by another animal, usually to gauge whether or not they're in heat.
