To answer the question of his wife Sharon and why she never dies from getting sucked dry or doesn't turn into a vampire is because she's actually an anomaly. The tl;dr is that GG has a dimension called the Backyard which essentially holds all the codes of the universe and is ruled by it like a lines code would a program. Sharon, simply enough, seems to have her Backyard entry bugged out she turned her completely invincible and immortal. That's litterally it.

HMMMMM, wonder why there aren't 100 villains trying to become immortal Gods with infinite power by manipulating Backyard the same way or just write in some cheat codes in general. Hold up, isn't that what I-no accomplished in the story mode? It all comes together now

Backyard is extremely difficult to access and if you do, you tend to just get killed by the absurd amount of info in it unless you're a powerful gear (Sol) or linked to the Original (Asuka). I-No is more complciated. At one point during the Crusades, humanity's wish to survive was so strong it created a powerful irregularity in the Backyard that thought it was a bug and turned her into a girl to contain it. That created essentially a god whom was I-No. Original/Happy Chaos took half of her powers for her sake and to protect humanity. At the end of Strive, he gave back those powers to I-No who turned back into a god.

Generally, the most you'll get from having your blood sucked by a vampire is being turned into a ghoul, in order to become a vampire, the vampire must share their blood with you and you have to drink it

You have to drink their blood?! When talking with Nago about it in the arcade mode Slayer clearly says that he was the one who bit Nago in order to "vamparize" and save his life. Maybe I am misunderstanding things, because drinking vampire's blood as a means to become one would certainly explain a lot.

@@Kashimaro It's always part of the 'ritual', but there are extra steps depending on the story, involving, often, biting. DIO is actually consistent with abiding by this rule since he shared his blood with Vanilla Ice in order to turn him into a vampire and bring him back to life. Vampires can have some really weird rules, like, in some continuities like DnD and Let The Right One In, a vampire cannot enter someone else's home without their permission (If they try to, they start to die).
