We used to play this for real, at practice sometimes back when I still bowled. The "correct" way to play, as I see it, is that you must hit at least one pin every throw. If you get 0 pins on your first throw, it is marked as a strike, and if you get 0 on your second throw (doesn't matter if it's a gutter or missing all of the remaining pins) it's marked as a spare. So each frame is a two pin minimum. It's a great way to practice your spare game. Especially if you have issues with sparing 7 or 10.

Because it's all about your setup angle and if you get a spin on it which is minor, and those are the only real factors. Real bowling the wrong twitch of your arm, wrist, or even fingers can send your ball off course quite easily. Along with the fact that the game will always have a "perfect" lane whereas real bowling can potentially have unlevel imperfections or uneven oiling.
