Ingredients:
(Tsp - Teaspoon Tbsp - Tablespoon lb - Pounds gm - Grams)
Oil - 3 tbsp
Dondakaya cut into thin rounds - 1 lb
Onion - 1 medium sized (150 gm) diced
Zilakara/Cumin Seeds - 1/2 tsp
Curry Leaves - 1 to 2 sprigs
Turmeric Powder - 1/2 tsp
Ginger - 2 inches piece Peeled and crushed
Red Chili Powder - 3/4 tsp or to taste
Salt - 3/4 tsp or to taste
Detailed Process:
Take a wok, add oil, dondakaya, onion, cumin seeds, Turmeric powder, few curry leaves. Mix. Turn on the stove. Keep it on medium flame. Cover with a lid and cook for 15 minutes or until the dondakaya is 1/2 cooked. Keep stirring in between. After it is 1/2 cooked, add the crushed ginger and let it fry in medium high flame uncovered until the dondakaya is fully cooked and browned to your preference. Keep stirring in between. Once it is browned and crispy, add red chili powder, salt and remaining curry leaves. Mix and stir fry for 3 minutes and turn off the flame. Serve with hot rice and ghee or as a side to Sambar or any dal or with curd rice. Enjoy!
