They are bounced tracks that are sent for final mixing and mastering.

a lot of producers, mixing engineers tend to work and balance their final versions of the songs in stems and thus consolidate those 100 layers of tracks into few manageable stems, like one track each for drums, bass, vocals, harmonies, synths, guitars
