Good analysis. However, even though it's for demonstration purpose but the termination of the cable should be properly done as I noticed some bare conductors showing.

If this is a video anyone here is learning on.. make sure you cut your jackets all the same length... all in a 90 degree fashion.... Most of all your conductors need to be terminated so that they are not visable under the terminals.. he almost shorted a million times... treat the wire as it is hot at all times, you will not regret these tips. sounds arrogant, but I am one of the best at the craft. This stuff is not difficult to install, so you want to make sure when you leave the product on a customers property it looks like they couldn't do it themselves. They will be looking at it for the rest of the time they have it! If you are a novice I recommend you spin the cables with the jackets cut all the way back and secured together. Lable the jackets out of sight. get a lable maker and mark them at each terminal on the board. Good Luck!

How secure is this? If you are using the onboard relay of the reader. If you rip it off the wall your door will unlock, because it's a fail safe lock. If you want security you should use the wiegand output and program it with a computer.

Sorry fella but your termination technique is rubbish. The stripped wire strands should be twisted tightly together, then bent back on themselves to give more contact area before inserting into the terminal. Also when terminating, you shouldn't have all that bare conductor showing outside the terminal.
