hey all
it may be an unpopular opinion but champagnes main flavor to me is basically the bubbles.
so to put this to the test I am making a double batch.
one gallon just with good old sugar and nothing else and another gallon using 250ml of homebrewing grape concentrate ( but it looks more like cider )
turns outs 250ml of vin class grape concentrate is around the 5/6% marks worth of sugar.
the hydrometer readings were basically trhe same which wasn't the plan but then again
as an experiment i guess similar percentages are good.

with autumn around the corner, I would love to see you doing something with rose hip, the little berries that appear once a rose flower dies down. they are very popular in southern germany to make jam with ( delicious ). they are also dried and made into herbal tea blends.

I also have intentions of trying something with rose hips. Their use in jam making is excellent as they can be used to replace pectin to thicken jam. Just got to wait for them to ripen currently 😭

@@makinghomebrewwildandcheap I've used rosehip powder with with apple juice to make a wine. It wasn't to my taste, but by "adding another step" I ended up with a great brandy.

Another brilliant experiment, really look forward to your videos. I don’t suppose you have any idea why it’s impossible to buy white grape juice anymore, a few years ago I made a lovely white wine with it. You can only get red now and that’s limited to at Asda and Sainsbury’s. Tried looking online, just going round in circles. I know there was a crop failure a few years ago . Was wondering if I could just use the concentrate that you had . Thanks for your hard work

Well it's only brilliant if by the end it works 😜 I actually hadn't noticed you couldn't get white grape juice 😆 I tend to like reds more. You should be able to swap it out for the homebrewers white concentrate. I used 250 ml which is the small bottle size. The colour is a bit darker but should work the same

further thought: surely kilju must have a native name in every place in the world where it has been made? should welsh-sugar-wine be daff-ju ? scots-sugar-wine taff-ju? yorkshire-sugar-wine t'brew? etc these basic drinks have existed as long as water, yeast and carbohydrates ... the idea that someone invented wine or beer is bizarre, i grew up in africa, I can tell folks for free, you don't need a recipe to make wine or beer, nature makes it all by itself. we just call it names

lets not forget the classic and most likely original fermentated sugar product......RUM !!!!! there would be most likey many different names for the same thing but over time one particular name sticks and well thats how its known.
