Nice. Always great to learn new methods. A couple of questions. 1. How long did it take for brisket to come up to temp after taking it out of the fridge and placing it on the smoker? 2. Any health concerns when letting meat cools off slowly (bacterial growth) and to avoid that I had seen others placing the vacuum-sealed meat in an ice bath for quick cooling then placing in fridge.

I'm not a health expert by any means but I vacuum seal the brisket once it's in the 140s internal temp range. I also don't think it's a wise idea to vacuum seal the meat while hot and put it in an ice bath either. It might not be wrong but something about shocking a hot cut of meat into an ice cold bath just doesn't seem right. As for how long it took, I want to say about 2-3 hours for it to come back up to the 160s range again.

It legit made a very decent amount of a difference. My only downside to it is that it's alot of time invested into it but again, you can do this on say during the week and resmoke it on the weekend.
