I recently did a Citrus Session Pale Ale in a five gallon corny keg. What i mean is was a pressure fermentation. I only used 4-1/2 gallons of water to provide some head space in the corny keg. I installed a spunding valve on the gas inlet set to 10 psi. After two weeks i did a closed transfer to another clean & sanitized corny keg. It came out great. Im looking forward to other flavors of these Flash Brew kits.

Sounds perfect! You might consider increasing the spunding pressure a few PSI to increase the carbonation (if you like that). Let me know how your Flash Brew kit works out.

What do we think the yeast is? Being several days to finish doesn’t sound like kveik, tho I’ve never used it at such low temps… could also be dady.

@@DougPipersr Distillers Active Dry Yeast. Very hardy stuff, high abv tolerance, pretty wide temp tolerance, will chew thru any sugar source from literal sugar, fruits, grain.

@@Jamison- I've not asked Chris yet! I've been prepping for the video and collecting my questions for Chris before I start, but that will definitely be one of them. Another thing I noticed is there are no carb tablets in either kit ...which was an unexpected surprise.

Well in a keg all you need is a c02 tank and regulator. Some people do bottle carb with sugar and you can also do that in a keg but remember it can be slightly yeasty because it’s basically fermenting and there is nowhere for the c02 to come out resulting in carbonating with fermentation c02. If this is what your talking about there is calculators on line. You basically put how much fluid you have and it tells you how much sugar to add. Just make sure your beer doesn’t sit for too long because it’s a possibility it won’t carbonate because the yeast have settled out.

Clearly Chris is thinking that's possible. I've been discussing "fresh wort" for years, but he just couldn't accept the liability, so this was the alternative. I don't think he believes its as good or better than "fresh wort" but for someone who primarily ships ....this is a much better alternative. Would you be willing to give it a try?

I used to think that too until Charlie Bamforth corrected me. He said Hazy Lil Thing was one of the most difficult beers he's ever worked on! Your thoughts?
