Just want to say an old fireman's trick is to test if something is hot or not with the back of your hand rather than the palm because if something is scolding hot your muscles in your hand can contract and you grab the hot object instead of releasing and letting go.

Really nice to see a video about bourbon. Info about how to make bourbon is very hard to find. 2 months ago I made a bourbon wash from barley, rye and flaked corn. I need to do a second wash to get 5 liters of spirit to put in a barrel. I really like you're channel. Nice to see that the channel is getting better and better. Keep up the good work.

I have been distilling for many years (ok about 15 years) so far from a guru but I enjoyed your video, some good info on cuts and also hit the safety points without sounding like a school teacher. I have used the freezer method to speed up my ageing, it really does seem to work well, great if you are low on drinking ready and want to speed some up. I tend to do 100lt batches and find I end up with a reasonable amount of product.

I'm a total new'b at this (my still is on the way 🥳) But I really enjoyed watching this a pleasure to sit through and easy to absorb, well done! I hope I will get to this point in a reasonably short time all though I totally agree with you that I have to go through those "Growing Steps". you layed out. and I'll try to be smart and do that! I ordered one of those 50 liter Vevor stills and I'm planning to upgrade the cooling right away with a better (longer) coil and probably add a thumper that all seems simple enough, I'm pretty handy with pipe and solder and tinsnips and got all the tools so no issue there. Time is the big one, although I am retired I always have such a long list of things to be done 🤯 But i've wanted to do this for so many decades it's now or never!!! 😏

Back to basics - like it, good reminder. Observation - your cuts seemed to be very selective (narrow). I recall an earlier video on your visit to the States you were surprised on how wide the cuts were given the tails unfavorable flavors die down over time. This set me thinking, rapid forced aging in short time may require more selective (narrow) cuts, aging using 'lady time' may require wider cuts. What do you think?

Some yeasts are top fermenting others are bottom fermenting so depending on the yeast used you might have a thick crust on top and be perfectly corect. Certianly some beer yeasts are top fermenting. I went around a brewery near Manchester and their open vats were wonderful and the smell was fantastic. All done with top fermenting yeasts on open vats.

I really love your practical videos man. Don't get me wrong, the b roll stuff is fun, and I love all the recipes, but I have missed the practical videos... even though it is nothing new to me anymore. I actually use a rapid aging process that I think mimics maturation much better than oak teabagging methods. I want to buy a barrel, I was thinking big, like 20l because surface area is just about half that of a real barrel, so more realistic time vs amount of oak infused but for right now rapid aging is going well. I use a lot less oak, like that piece you dropped in would be a bit big for a 4l jar with headspace left, and temp/pressure cycle. Changing temperature causes changes in pressure at the same time in a well sealed jar (and you can get a wrapped gasket to seal pretty well if you take your time wrapping, I get a vaccume pop with mine). That and letting volitiles escape after a hot cycle, after it cools to room temp, without disturbing much to mimic angels share, and breathing then vigorously shaking oxygen in to the spirit after each stage of the cycle, and at least every couple days when it's just sitting to mimic the air exchange that happens through the wood of a real barrel. I know a barrel will still be better, but I think my method is about as close as you will get, over about 3 months and 10 cycles room temp to very hot (like 60c) back to room, then fridge and back again, over a couple days per cycle.

Awesome video, I've made quite a few spirits already so most of the information wasn't anything new to me but it never hurts to get back to basics and there were still plenty of good reminders there. I kind of wish all your videos were 3 hours long, although the algorithm probably wouldn't approve. Need to source some proper oak blocks since all I can get here is chips or spirals. Might order some of yours but I'm guessing that the shipping and fees to Iceland would make that quite expensive.
