Hey everyone! I love homemade yogurt because it's not only delicious, but loaded with gut healing probiotics. Don't forget to add lots of seasonal fruit or some gluten-free granola (recipe in description box). And if you're dairy-free, you can whip up a batch of my dairy-free coconut yogurt which is super creamy and delicious! Here's the link: downshiftology.com/recipes/coconut-yogurt-with-blood-oranges-and-cacao-nibs/ Enjoy!

Just as an alternative, you can make the yogurt in the oven in 4 hrs.. preheat at 100 C.. turn off. The place the jars in, with no lid on. Don't open the oven for 4 hrs. No air should go in. Ready in 4 hrs.. thx for the recipe.. I never heated the milk in the microwave. I ll try next time..

Traditional way to make yogurt without any electronic gadgets- Bring 1 litre/5-6 cups of milk to a boil on your regular stove (no microwave needed) Let it cool down naturally to lukewarm temperature. It takes not more than half an hour. Smoothen a couple of spoonful of curd/yogurt with a spoonful of milk and mix it in the bowl of boiled milk. Stir-rotate it for 20-30 times. No need to remove the top layer of the fat that forms on the boiled milk, stir it all together. It disappears in the end product. That way your yogurt will be set to a rich creamy consistency. Cover it with the lid and keep it in a warm place for 6-7 hours. You can place a thick pot upside down over it to keep it warmer. If the climate is particularly cold, place the milk bowl in a larger vessel with hot water. To set/store/serve- Yogurt/curd being acidic, should not be set/stored/served in ironware. Best to store in clayware as it absorbs the moisture and gives thick curd. Second best is stone or stainless steel. Never iron for acidic food. Flavouring- You can add sugar/jaggery/palm sugar/rose essence or cocoa powder after boiling the milk and before keeping it to set. However do not to add any fruits before. Just dip the fruit pieces with a dash of honey later on.

When using a yogurt maker, you can skip the whole pre-heat your milk then let it cool part. You can mix the milk and the starter/yogurt, pour it in the jars and set your timer. And 8-12 hours later you’ve got your batch ! At least it works for me !

Can you speak to your thoughts about using a microwave to heat food? Whether you think its less nutritionally safe? Or is there only certain things you use a microwave for? And if you ever use a small convection oven for reheating? Sorry that's a long complicsted comment, I really beat myself up for using a microwave.
@Downshiftology
@Downshiftology 6 жыл бұрын
I think it's a personal choice and you'd have to weigh the pros and cons of the scientific research. I do use a microwave for reheating food, but typically use the oven or stovetop for most of my cooking (ie - I don't eat a lot of packaged food items). I personally believe there are far more harmful foods, behaviors and environmental influences...so in the grand scheme of things the microwave is not my biggest concern. :)
@marzigeisha

Downshiftology Thank you. I agree actually and I think the technology is changing to be more safe. I avoid all processed foods so I think this one thing has gotta be forgivable. Thanks for your thoughtful response. :) We're born on the same day... makes me wonder if that's part of why I find your style and approach so in sync with mine.

Have you ever made yogurt using your cashew milk recipe? Also wondering if you did, can you use left over as the starter? I don't want to have to keep buying starting. I have made yogurt using the "old" as a new starter, but I have never made yogurt with nut milks, and I've been wanting to try making yogurt from the cashew milk...which I love! I also make ice cream with that! Thanks so much.

tks for explaining and making this so simple!!! what's the healthiest? ? goat, coconut, grass fed cow?? which will give the best probiotics and nutrition. Thank you so much; ). oh, where to get the starters.
@Downshiftology
@Downshiftology 7 жыл бұрын
Hi Christina - I wouldn't say one milk is necessarily healthier than another, it's more what milk works best for your body/digestion. If you can do dairy, grass-fed would be best. Goat's milk is great for those looking for less lactose and casein proteins (which for some, makes it easier to digest that cow's milk). And if you're dairy-free coconut milk is a great option. The starter I use is linked in the description box. Happy you liked the video! :) x

Where do you get your yogurt starter? Can you add stuff, such as fruit to flavor the yogurt, before it's made? Or is it best to add it in after?
@RTAV108
@RTAV108 3 жыл бұрын
In stead of a yogurt starter, you can use a spoonful of curd or plain yogurt you already have in your kitchen. While you can add sugar to it before setting, it's best to add fruits or flavours after it is set. To add any flavour later on, add the essence and whisk the yogurt gently. Traditional way to make yogurt- Bring 1 litre/4 cups of milk to a boil on gas stove (no microwave needed) Let it cool down naturally to lukewarm temperature Smoothen a spoonful of curd/yogurt with a spoonful of milk and mix it in the bowl of boiled milk. Stir it for 20-30 times. Cover it with the lid and keep it in a warm place for 6-7 hours. no need to remove the top layer of fat that forms on the boiled milk, stir it all together. Your yogurt will be set to a rich creamy consistency. To set/store/serve- Yogurt/curd being acidic, should not be stored/served in ironware. Best to store in clayware as it absorbs the moisture and gives thick curd. Second best is stone or steel. Never iron for acidic food.

Yes, you can definitely culture nut milks! The only difference is because there's no lactose in nut milks, you'll need a vegan starter and some kind of thickening agent to help it firm up, such as gelatin, pectin or agar powder. You could also use coconut milk and I have a recipe for coconut yogurt with blood oranges and cacao nibs on my website: downshiftology.com/recipes/coconut-yogurt-with-blood-oranges-and-cacao-nibs/ It's super creamy and delicious! :) x

Downshiftology Thank you! I ended up just using the cashew milk with a non-dairy starter culture (some plain store bought almond yogurt). I didn’t use any gelatin, but it thickened up after I strained it! Today’s my first day of whole30, hopefully the familiarity of yogurt will make the transition smooth 😂

I had no idea yoghurt can be this easy. What can I use if I don’t have the machine.??

Yes, super easy! The process is slightly different if you're not using a machine, so I'd recommend Googling that. :)

this is as simple as ABC...but my question is does it taste bland? Is it sweet because I kind of have a sweet tooth 🤗😁 I don't like bland yoghurts

If you're used to store-bought yogurt that has a lot of sugar, it will taste more tart. But I find that your taste buds soon adjust once you reduce the sugar. If you like it sweeter, you could add a little maple syrup or honey or puree some fresh fruit. It would still be healthier than the processed store-bought variety. :) x

Is there an easier way without the appliance to make yogurt
@Downshiftology
@Downshiftology 6 жыл бұрын
You could definitely do it in a glass jar and set it in the oven overnight with the light on to let it incubate. There are many tutorials online that show that. I just prefer the machine as it's a no-brainer (I'd probably forget it in the oven - ha!) and it's already perfectly portioned. But lots of options for sure.

Anyone notice the “granola that’s both gluten-free and grain-free” comment at the end of the video? I’m confused since there’s oats in there.. are oats not grains? Has my life been a lie?!

Please don't ever put your milk in the microwave and also you don't need to pre-heat the milk at all. Also you should ferment the yogurt for about 24h in order to decrease the lactose as much as possible and to give a better chance to the bacteria to repopulate.

Yes, it can. You can definitely do it with mason jars in an oven as well. You'll have to search for other videos online. :)

all you need to do is mix yogurt and milk and keep it between 35 and 50 Celsius degrees for at least 4 hours (but you can leave it way longer). you cause the oven with only the light on, leaving it close to a heating source, leaving it outside if the temperature is hotter than 35 celcius degree (be sure to protect it from sun rays because they kill the bacteria please he need in a black plastic bag is ideal because it will absorbe the heat from the Sun rays raising the temperature). I once to talk to a woman who simply raise the temperature of the milk with a normal pan, turn off the heat and then leave it there she says it come out fine but I didn't really understood how she did it. I personally make it it with a steamer: I boil the water in the streamer turn off the heat place yogurt and milk moisture in the steamer, close the lid, put a towel over the steamer to prevent the heating from going away and leave it there overnight. it usually turns out really good
