What about a barbeque with a cover and using indirect heat, for chicken for example? No need to burn it. What is wrong with my method? I like the charcoal de bois, when it is crazy hot, I put on the grill, and burn off anything left on the grill. It works for me. Removes all fat and debris from the last barbeque, even skin stuck to the grill. Especially fish skin. Burns right off. I need the charcoal to cool anyway before I can cook, might as well clean the grill with free hyper-heat. Sterilized.
