The inaugural seminar at the Center for human Nutrition, Exercise and Metabolism (NExT Center), NJ-Institute of Food, Nutrition and Health (NJ-IFNH) was given by Dr. Donald Layman, PhD, Professor Emeritus, University of Illinois. Dr. Layman is a leading expert on protein metabolism, and his work defined dietary protein requirements and timing to optimize the metabolic roles of amino acids and protein synthesis.
. This lecture reviews leucine metabolism and muscle health during weight loss and aging. The event took place at Rutgers University-New Brunswick on November 10th, 2021.

I am an architect that worked on the IFNH building project during the design and construction phases for over three years. It is great to see it in operation. Although I worked on many interesting science and medical related college and university building projects, the IFNH project was one of my favorites partly because it helped focus my attention on an especially important topic. I tell my mother that helping her to regain her health has become my most important project. Although she is not statistically significant or peer reviewed, her experience has had real significance among her circle of friends and family. 2 1/2 years ago, my 80 year old mother finally had a follow up appointment with her physician which was delayed for months because her doctor has been in charge of treating Covid patients in the hospital and in nursing homes and was not able to meet with her. She had a full blood panel taken for this visit and her doctor was astounded at the progress she had made during the last year. She is now no longer diabetic and she was instructed to stop taking insulin after having been on it for 12 years. Her doctor also praised her kidney function which has never looked better. Also, she couldn't believe that her total cholesterol was only 139, with LDL of 67, HDL of 60, and triglycerides of 82 which is a big improvement for her. According to the Framingham Heart Study, these numbers mean that she is virtually "heart attack proof" as many plant based doctors have noted. Her physician (Johns Hopkins med school grad) mentioned that she has upgraded the diet for her family based on this experience. She also asked my mom to share her experience with our community after the pandemic. All of these results are exactly what I had hoped would occur. Here is the menu that I had developed for her to try to mimic what she was used to eating -> GSP Mother's Menu - While this menu is not a pure whole foods plant based diet, it appears to be health promoting enough to work for her. She was able to get off of all blood pressure medications after 3 years, tapering off so as not to over-medicate which is dangerous because it can deprive tissues of necessary oxygen and nutrients. I plugged her bloodwork test values into the Levine Biological Age Calculator and she has aged minus 15 years during the last 3 years. I joke with her that she may be required to give up her Social Security benefits if she keeps going like that. My understanding is that low carb diets (commonly recommended today) are a workaround that do not address the root cause of diabetes which is excess intramyocellular lipids (also fatty liver/pancreas) and the resulting insulin resistance. Excess saturated fats and refined sugar/flour are the most common cause of this metabolic system failure. Unless a person can eat whole food complex carbs again without a prolonged spiking of their blood sugar, type 2 diabetes has not been reversed. I attended a nutrition education program at her local hospital for diabetics and the food guide that they passed out was written by one of the leading manufacturers of insulin and sadly, the advice offered to people would ensure that they remain customers for rest of their shortened life. IFNH Research Idea: Recruit some motivated middle aged and elderly study participants to use feedback from the Levine Biological Age Calculator to try different protocols to reverse biological aging. I appreciate Dr. Layman's learned perspective on the biochemistry of protein. It's a bit off topic and unrealistic to ask him about animal consumption and how that plays out with our myriad environmental issues. The biggest fix for the health of Americans is to get them off food excess, especially engineered junk food, and secondly get them to move more. Our food can't be fixed until the food companies are properly regulated, and I don't see that happening in a country that values the "freedom" of idiots over all else.

You will never get the all amino acids you need, nor are they bioavailable in a vegan diet, IMO .

Can someone eating a vegan diet who is 71 years old, obtain the best proteins necessary by just following this diet?

Plenty of amino acids and leucine in legumes grains nuts and seeds. Ensuring you eat enough of these good foods.

But will eat too many calories probably. That is the main problem. How to get sufficient proteins but not too much calories. Especially if you 60 years plus.

Correct if wrong, but this very scientific presentation and promotion of eating animal proteins is in contradiction to those who live the longest and eat small amounts of animal protein in what are known as "Blue Zones".

The blue zones diets were somewhat fabricated/ misleading however you are right animal protein is not needed and too much branch chain amino acids is aging as well as the high methionine. Maximally stimulating protein synthesis through the mtor pathway is not we want for longetivity but for faster growth and performance increases we do.

@@knockingseeker Dr. Layman is saying that protein intake is very important for longevity. However, literature on the diets of the Icaria, Greece and Okinawa, Japan islands show low protein intake and people who have the longest lifespans in the world. It leads to the question: Is it possible that more of these people would live longer with higher protein, or is higher protein not necessary and is Layman incorrect?

@@riumudamc4686 the protein in those diets is under reported and not the lowest in the whole world. Around 70-100g a day for men. It seems low protein is good for longetivity but not super low. but higher intake until a person full growth can help ensure we reach our maximum potential height/size. But that doesn’t necessarily have to come from meat or dairy but it would make it easier to get the protein as plant sources are not complete proteins and harder to eat enough to get high protein

@@knockingseeker are those 70-100 grams of protein per day for men coming from animal protein? Every documentary I've seen on the Icarian and Okinawan diets suggest low animal protein intake. This is with interviews of the people on the islands.

@@riumudamc4686 I’m not sure 🤔 it’s easy to find someone to interview that will line up with the narrative though. They probably had pre interview screenings. I would think that some protein in ikaria and Sardinia would be from goat and sheep cheese but most people there probably don’t have the same diet with the same meat intake. Vegan is fine for most if you take care to get enough plant protein from diversity of foods, legumes, whole grains nuts seeds.

Fyi, NExt is in the Description section. Also, the sound quality did improve slightly as did the slide visibilty once they had a AV tech person fix it. May be worth checking it out again...just fast forward over the intro.
