I made this today and the cake is delicious but the coconut kinda formed a hard shell on the top that just separated from the cake and slipped off when I tried to cut into the cake 😭😭 what did I do wrong?

You let it bake for 10 minutes with the topping? I personally recommend doing only 5 minutes in the oven with the topping, otherwise the sugar will become to hard when cooled off. Also in the description of this video it says to cook the topping till most of the moisture has disappeared. You shouldn't do that. The topping needs moisture to have a semi-soft texture when cooled off. If you let all the moist evaporate then again, the sugar will harden to much (hard caramel)
