+Mahuika Parata drag started out as Trans, GNC, queer, and LGBT+ people parodying and making a satire of a lot of gender roles and stereotypes and a lot of drag personas are characters that are binarily gendered and use he or she pronouns. A lot of drag queens, especially in mainstream drag culture, are cis men, but there are still people of lots of different genders who do drag. Some very famous drag queens were Trans women. And in a season of RuPaul one of the queens came out as Trans. As far as the queens all using she pronouns, a lot of them are like Kim Chi: their drag persona is a female character, regardless of their gender. It's nothing to complain about. If you don't like it, drag isn't the only area where this happens.
