I just did this for the heck of it. you actually can't avoid this fight as the evil eye controls all access to the everfall and will make every door lead to the chamber of confusion. Basically the eye has beef with you specifically for waking him up at the beginning of the game. His shields come down during his bite, eyebeam, and regeneration. sorcerer has a big disadvantage here.
