Today I try my luck at cooking a cross rib roast! I used a sous vide for cooking this roast, and the results were fantastic. I am excited to share with you my experience on creating a roast.

As a butcher, any cross rib section steaks and roasts which inclused the top blade/flat iron are absolutely tremendous and a favorite of mine. Very underrated and flavorful so kudos to you for making this roast be even tastier than it is!

Is 12 hrs enough? Would it be better to do 24 hrs to help break down the fibers to soften the meat more? And can you sear it right away after taking it out of the bath and putting it in ice water?

I needed to cool the roast down immediately after pulling it from the Sous Vide. It was about 1:00am, and I wanted to sleep. :)

Putting it in ice bath right after is to help prevent the growing of bacteria, especially if you want to store it in cold afterward.

Instead of searing the roast with butter and rosemary, I would put some type of sauce, and finish it in the oven at 400-450f for an hour. You can always throw some butter and rosemary on top of the roast. Let me know if you try this instead!

I did a rib eye roast by sous vide and covered it with butter mixed with salt and herbs before sear roasting in the oven for that crust.
