Dried apricots - Dehydrated fruit - How to dry apricots

Apricots were quite plentiful this year. I have so many to friends and met new neighbors to share from my tree. There was still so many left so we decided to dry some for snacking later. The girls picked a big bowl full and we washed, sliced and pitted them up for the dehydrator. A quick spray of of coconut oil prevents the fruit from sticking to the screens. Set the dehydrator to 135 degrees F and check them for dryness after a couple hours. Switch the racks from top to bottom to help even the heating and airflow at least once during the drying time. I did it at the 4 hour mark. They looked great at the 6 hour point but not quite there... about 8 hours did it. Your apricots may vary depending on size and moisture content, so check for "doneness" as you go.

They didn’t last very long - not that they went bad, they were gobbled pretty quick. We kept them in the fridge until they were all eaten!

Spraying the trays with oil turned out to be a big mistake. Oil is an oclusive that traps water. The undersides of my apricots became oily and took many more hours to dehydrate. I should have known better than to listen to that. They won't stick since the temperature isn't high enough to cook them.

Moderation is key. Sorry you had problems. I have had problems with sticking in the past on the cut side. The fruit would grab the rack pretty aggressively. I hope your treat was tasty!

@@robdude1969 I’ve got a tree tree full of apricots and a tree with Saturn peaches. It’s going to be 105 today. I was thinking maybe use some tinfoil and roll up the windows in the car, and let it sit in the sun. What do you think?
