My Fuyu persimmon tree is loaded with fruit and they are almost ripe today (barely sweet now). I am anxious to try to make hoshigaki since I just only now heard of it, thanks to the internet. Thank you for making this great video! 😀😀

I've never seen persimmons dried that way! I have a bunch of persimmons this year, if any are left (very delicious!) I think I will dry to dry them this way. Thank-you for your informative video!

about the three week mark is the way i like em, its like a jelly almost. about 6 weeks they get like sugar dates which is still very good. this works great for sweet and astringent persimmons.

I peeled the whole fruit and bake them at 180 f for many hours a day and turned off the oven when i went out or went to bed i did it for 4 days. They looked like candied fruit. I don’t know whether it is dried enough

Can this process be initiated with persimmons that are a bit less ripe? The ones I have tend to become soft as they get orange in color.

I tried doing this with the fuyu persimmons but they got very moldy.... any tips or suggestions to avoid that?

Set a fan on them for 4-7 days. I had the same problem and this worked for me

I live near San Jose and have two large persimmon trees. While the rest of my fruit trees were a bust this year my persimmons went crazy. I was wondering what to do with them until I saw this video.

I bought six persimmons to try this but they were very soft and did not look like yours when I tried to peel them. Soft and juicy. Do I need to find persimmons that are not ripe?

Hi King Crimson, yes if you notice in the video the persimmons are drying when they have that beautiful deep color. They must be the Fuyu type persimmon like in the video still be firm and crunchy to eat Not over Ripe.

you don't need to do anything else just eat it like that, it taste sweet, soft and a bit chewy. but you can make dessert punch with dried permimson, cinnamon and ginger, you can find this recipe online. Hope I answer your question ^^.

Thank you so much Bin1127 and the great question. No, FuYu persimmons outer skin helps prevent mold. This has been a traditional way of drying persimmons in Southeast Asia for thousands of years.

Looks like a lot of work for a few pieces of dried fruit. Also dust is likely to cover the fruit when the process finishea.

My next door neighbor is from Japan. Her grandmother grew Siago persimmons. Which are admittedly somewhat softer than Fuyus. But she said we could never dry them outdoors in our humid climate near Houston. Also, we live in a bird migratory zone that cause great damage to my Fuyus. Do you have bird damage Lai?

I actually did just that with my alleged Hirotanenashis....which aren’t much astringent in a fresh form and also looking more like sweet Sajo’s or maybe Fuyu O Gosho’s but anyway …. let them hang until they were fully ripen( or max redish-living in a cold dark land) and they already showed first signs of rot at the base - had to quick dry them and result is delicious ! definetely a sugary improved taste !

oh and the advice : peel off skin as thin as possible (layer direct under the skin is the sweetest) and then slice them and put em in your dehydrator = done ! maybe remove when there is still some moisture in them, so that they can build up more flavour while curing ...but sugar content must be already high enough then, to prevent rot !
