Mushrooms that dries almost always dries really well and they last for so long. The shelves in my pantry is filled to the brim with mushrooms and I can't eat them fast enough. A couple of weeks ago I ate 10 year old dried winter chanterelles that were perfectly fine. And my god, the level of flavour between a fresh Boletus edulis and a dried one is leaps and bounds. It concentrates the flavour so well.

Great videos! Just a suggestion to save some energy. Try to get your wood chips in the wet stage before the drying process. Nature puts a bunch of water in the wood, then humans use energy to dry the wood to chips, then you add water back in. It may save on your water bill.??

I found this some mushrooms produce a delicious broth which pairs nicely with fresh vegetables and Asian egg noodles. But in this case you need to rehydrate the mushrooms in boiling water for at least 10 minutes before you then begin making the meal. Otherwise the mushrooms will still be hard.

I don't know for sure, but the drying process is usually done around 100-125f, so I would imagine that temp would be sufficient for breaking down the cell wall, also taking the moisture out of the mushroom must help.

You can try, throwing a bunch of fresh mushies in a glass (so you can observe) tank, let them decompose until they're all mushed up, then dry them out. You're essentially cooking them in a closed glass jar, but you want a powder form for storage. You can also try, keeping fresh mushies in a glass tank. They will decompose into oils and start to form lighter oils/crystals. You will prefer the latter method because the mushies will become more concentrated. But you will want to know the first stage, and also how to quickly process them if you need to sell the oil/powder or if you need to store them in dry powder/crystal form. Basically, the life cycle of a fruit body after it's harvested is this. Fresh mushies -> mush -> crude oil -> lighter oils mixed w/ crude oil-> crystals mixed w/ oil -> pure crystals. Crude oil may have water present. It can be mixed up and become homogenous. Crystals will form inside of the lighter oil.

Spent substrates are basically the same, but you have to pay attention to when the rest of the wood turns into same kind of oil. It will. Oil is just like mycelium.

Can you grind fresh mushrooms up into a mush, dry it out, then grind it up again? Two years ago, when I came back to Vietnam, I was chugging Shitake tea with milk like crazy. It's been a long way. I've had a few transfusions. Meh. Let's see what the ink powders look like. That may pipe up a lot of interests from a lot of different hobbyists.

I will answer that question for Micheal. The Lion’s Mane is in high demand since it has been made public that it is real brain food. Without going too deep into the why’s here is why we have a commercial grow. I have peripheral neuropathy and learned a little over a year ago that Lion’s Mane helps the brain with the releasing nerve growth factors that causes the neurons to regrow. This has helped my personal situation. Others found out we were growing and said they would buy any extras. We have customers that swear by using Lion’s Mane tincture for Parkinson’s, Alzheimer’s, dementia and neuropathy. It is our biggest requested mushroom. We sell about 140 lbs per week and it is a challenge to keep it rolling week in and week out. I can’t imagine production levels like Michael’s.
