臭苋菜梗是一道历史悠久的地方传统名菜。色泽亮丽,色绿如碧,清香酥嫩,鲜美入味,助消化,增食欲,最宜下饭。有人说臭,也有人说很香,总之超级下饭。 Stinky amaranth stems are a traditional local delicacy with a long history. They are bright in color, green like jade, fresh and tender, delicious and tasty, and can help digestion and increase appetite. They are best eaten with rice. Some people say they are smelly, while others say they are very fragrant. In short, they are super delicious with rice.

Can you not rinse the stems after fermentation. Remove the strong salt flavour? Easier for the kids to eat then.

太棒了,我終於學到了.. 1949年父輩與祖輩是浙江人,隨蔣來台,帶來了這道菜,50年前我小時候曾祖母做過,記憶中我曾經吃過,後來曾祖母過世後,沒人再做過這道菜,台灣沒人做沒人吃,野地裡常見到莧菜沒人採,這一次我要自己做做看..

其實中途要加鹽水進去助長發酵,鹽巴可以減半,發酵程度是一樣的。時代在進步,很多料理也須改善,否則損傷肝腎臟,得不償失!
