Oh interesting, I didn't know brushing vinegar on it helps draws out moisture. It looks really delicious btw!

Ill let you in on a secret; there is no need for vinegar to try draw out the moisture since it has already been in the fridge for days. He actually brushed on cooking oil before putting in the oven to make the skin crisp up real fast while and while doing so not overcooking the meat and retaining moisture.

According to them, they have a set time to cook the meat, and every sec counts. Any longer, the meat will be overcooked.

Well, one loaf of pork roast can feed 8-10 pax haha. So it's considerably affordable for such a sophisticated pork roast.
