Dry Gulab Jamun Recipe:
For the Jamun :
Khoya (grated) - 2 Cups
Paneer (grated) - 1 Cup
Maida - 4 tbsp
Milk - 1 tbsp +1 tbsp (optional)
Oil - For Deep Frying
For the Sugar Syrup :
Sugar - 2 Cups
Water - 2 Cups
Green Cardamom - 4 nos
For Coating :
Sugar (coarsely blend) - 1 Cup
Desiccated Coconut - 1 Cup
Cooking Instructions:
1. In a bowl, grate khoya and paneer, add a tablespoon of milk. Knead it all together till it binds evenly. Add the 2nd spoon of milk if it does not bind evenly.
2. Divide and roll them into spheres.
3. Heat oil in a Kadai, deep fry the kohya spheres in it till it turns golden brown. Keep it aside.
4. In another pan, add sugar, water and cardamom. Bring it to a boil and let it thicken a little.
5. Transfer the fried Jamun to the sugar syrup and let it soak for 25-30 minutes.
6. Take the Jamun off the sugar syrup and drain it well.
7. Coarsely grind sugar and spread it on a plate.
8. Roll the soaked Jamun evenly on the sugar and serve.
Cooking Tips:
1. Do not soak the gulab jamun for too long. Let it be a little dry on the inside.
