Duck Duo: Dry Aged Duck Breast, Duck Confit Croquette | Duck Breast Plating

Today I made Duck Duo, with dry-aged duck breast and duck confit croquette!
This is my attempt to sort of improve my duck breast plating video I did a while ago. That video got quite high of views on my channel and I wanted to improve on it :)
Dry aging duck, or more like drying duck skin in the fridge makes a huge difference in how the duck breast turns out to be. The skin gets very crispy and the meat becomes meatier.
I used Eleven Madison Park's duck spice recipe, using lavender and honey but I approached it differently. Instead of roasting it whole, I took the breast off and put it on the meat side instead of the skin side. I was worried it was going to burn if I were to spice the skin side.
Anyway, the result was a crispy duck breast, crispy duck croquette with aromatic mandarin orange sauce and I would be happy having that any day!
